Pesto! It's one of our all-time favorite sauces! We love it on pasta, chicken, shrimp, and even as a dip with crusty bread. It's just perfect when we can't decide what to whip up for dinner. Trust me, it's our go-to sauce for so many dishes! Have you ever tried using pesto as a pizza sauce? It's incredible!! The pizza just tastes out of this world! And, if you really want to make it "fancy," try making a pesto shrimp pizza with puff pastry. It's a perfect dish to serve at a cocktail party or as a fun appetizer while spending time with your favorite person.
Spicy Lower in Calories Pesto
We love spicy food, and using pesto is a perfect way to make a sauce that can hold up to habaneros! So, making a spicy pesto shrimp pizza with puff pastry really hit the spot. The lemon in the sauce adds brightness, and the habanero makes this pizza irresistible. We reduced the amount of oil in the pesto and added more lemon. Additionally, we use sunflower or pepitas seeds instead of the traditional pine nuts and don't add as much cheese to the sauce. How to make this Pesto Shrimp Pizza recipe
Who doesn't love a delicious and easy-to-make pizza? With just a little bit of prep time (less than 10 minutes), you'll have a pizza ready to devour. We always make a ton of pesto during the summer and freeze it so we can enjoy it whenever we want. But don't worry if you don't have homemade pesto; store-bought will work just as well. And if you're not a fan of shrimp, no problem - just swap it out for chicken. It's that easy and oh-so delicious!
We purchased puff pastry. I guess you can make puff pastry, but wow, that seems like a lot of work! All we had to do was get the puff pastry out of the freezer 20 minutes or so before starting to build the pizza.
Saute the shrimp. Heat 1 Tablespoon of olive oil and add the shrimp with a teaspoon of salt. After a couple of minutes, flip the shrimp and add the lemon juice. Cook the shrimp for an additional couple of minutes until the shrimp have turned pink. Don't overcook the shrimp. In fact, if they are a little undercooked at this point, it's okay. They will cook more on the pizza.
Spread the pesto sauce evenly over the puff pastry.
Top the pesto with the cooked shrimp and then the feta cheese, and finally, top with parmesan cheese.
Place the pizza in a 400-degree oven for 15 minutes or until the crust is done.
Let the pizza cool for 5-10 minutes before cutting it. I get it, it's hard to wait when your pesto shrimp pizza is looking and smelling so good, but trust me it's totally worth it. Patience is key!
We love slicing the pizza into small pieces with one or two shrimp on each slice. They're super easy to munch on and always a hit at parties. But if you want to slice it into bigger pieces, no worries - it'll still be great. Trust us, you won't be disappointed!

A Twist on Pizza Night: Pesto Shrimp Pizza
A Few Things We Use
Ingredients
- 1 Sheet Puff Pastry
- 1 Cup Pesto
- 1 Tablespoon Olive Oil
- 12 Large Shrimp
- ½ teaspoon Salt
- ½ Lemon
- ½ Cup Feta Cheese
- 3 Tablespoons Parmesan Cheese
Instructions
- Remove shells from shrimp. Preheat oven to 400 degrees.
- Remove puff pastry from freezer 20 minutes before needed. When the pastry is at room temperature, unfold it and place it on a baking sheet.
- Cook the shrimp. Heat 1 Tablespoon olive oil in a saute pan. Add the shrimp. Sprinkle on the salt. Cook for 1 to 2 minutes.
- Flip the shrimp. Add the juice from ½ a Lemon (about 1 ½ Tablespoons of Lemon juice). Cook the shrimp until they are a nice pink color. Remove from heat.
- Spread the pesto over the puff pastry.
- Place the cooked shrimp on top of the pesto.
- Sprinkle on the feta cheese and the parmesan cheese.
- Place the pizza in a preheated oven. Bake for 15 minutes or until the crust has puffed up and browned.
- Let the pizza rest for a few minutes before cutting.
