A nice bowl of soup is always enjoyed in our house. One of my favorite soups is this Cheesy Potato Soup, especially in the middle of winter. This is a really easy soup recipe, especially when cooking the potatoes and bacon in the air fryer. The traditional version of this soup is made with heavy cream. In order to cut some of the calories, but not the flavor or thickness, we use one percent milk. The best part, the soup is always creamy and delicious.
Cheesy Potato soup in the AirFryer
I understand that it may seem unusual to make this cheesy potato soup in an air fryer. However, this recipe uses air frying to cook the potatoes and bacon rather than baking the potatoes. The rest of the ingredients are cooked in a saucepan, and in no time, you'll have a warm and comforting bowl of soup to savor.
How to make Air Fryer Bacon and Cheesy Potato Soup
- We use russet potatoes, which are the same kind of potatoes that are used to make baked potatoes. To prepare them for the soup, lightly coat the potatoes with olive oil and sprinkle some salt on them. Then, place them in the air fryer and cook for approximately 30 minutes. If you're short on time, you can make the potatoes a day or two before making the soup.
- While the potatoes are cooling down, you can Air Fry bacon. We prefer our bacon with a bit of spice, so we sprinkle some cayenne pepper on top before cooking. It takes around 10 minutes to prepare the air fry bacon, but you can also cook it in the oven. To do this, just place some foil on a baking sheet, add the bacon, and place it in a 375-degree oven. Usually, it takes about 20 minutes to cook the bacon. If you want to make things even easier, you can just use bacon bits
Cool the Potatoes
- Let the potatoes cool. Cut the potatoes in half and scoop out the potato from the skin. Cut into bite-size pieces.
- Melt the butter in a saucepan with ½ the spring onions, garlic, salt and pepper. Sauté for one to two minutes. Add the flour.
- Add the milk and heat over medium to low heat. Simmer for about 10 minutes. It is important to stir the milk often to ensure it doesn't burn.
- Add the potatoes and cheese to the potatoes. Stir until the cheese melts.
- Serve with all your favorite toppings. We like Bacon bits, green onions and a little additional cheese.

Delicious and Easy Cheesy Potato Soup Recip
A Few Things We Use
Ingredients
- 2 medium Baking Potatoes
- ½ Tablespoon Olive Oil
- 2 teaspoons Course Sea Salt
- 1 Tablespoon Butter
- 4 Green Onions Spring Onions
- 1 teaspoon Garlic
- 1 Tablespoon Flour
- ½ teaspoon Sea Salt
- ¼ teaspoon Black Pepper
- 2 ½ Cups Milk We used 1%
- 4 Ounces Cheddar Cheese (grated) Sharp Cheddar is also good
Bacon
- 4 Slices Bacon or use 2 ounces of bacon bits
Instructions
- Wash potatoes under cool water. Rub Olive Oil on the potatoes.
- Sprinkle each potato with coarse salt and place in Air Fryer
- Air Fry the potato for 25 to 35 minutes (depending on the potato size) at 375 degrees. When the potato is done, the skin will be crispy, and you should easily be able to poke it with a fork easily. (BTW - These are the exact steps to make an air fryer baked potato)
- Let the potato cool. Cut in half long ways and scoop out the pulp. NOTE: If you want potato skins as a snack. Just place the skins back into the oven and bake for 10 minutes. Add Cheese and melt, then add your favorite toppings like bacon and green onions.
- Bacon - either Air Fry or Bake. OR use Bacon Bits! If using Air Fryer: Place Bacon in Air Fryer. Cook at 400 degrees for 5 minutes. Flip the bacon and cook for an additional 3 - 4 minutes until the bacon is crispy. Set aside, one excellent chop for topping.
- Chop the green onions (spring onions).
- On medium heat, melt butter in a saucepan. Add garlic, salt, pepper, and half of the green onions. Reserve the other half of the onions for topping on the soup. Sauté the mixture for about 30 seconds to one minute.
- Stir in the flour. Whisk in all the milk. Slowly heat the milk until it is hot, about 10 minutes. Do NOT Boil.
- Cut the scooped-out potato into bite-size pieces, then stir into the milk mixture.
- Gently stir in the Cheddar Cheese. Heat until the Cheese is melted.
- Top with the bacon (or bacon bits) cheese and green spring onions
- Enjoy!!!
