I don't know about you, but during the spring and summer seasons, we absolutely love to grill! It's so much better to cook outside rather than heat up the house with the stove. Plus, we can relax, listen to some music, sip some wine, and catch up with friends while cooking dinner. It's so much fun!
Grilling on a diet is also very easy. Grilled food has so much flavor, and the smoke and char enhance the spices you use. I could grill out every night! And when you're on a diet, you don't have to add as much oil to your food. Let the grill and spices add the flavors to the dish. This way, you can cut down on calories and still enjoy the deliciousness of the food.
I know some people think grilling is just for guys, but I disagree. I think it's a great way to spend time with friends and family while enjoying yummy food and once again demonstrating that women can do anything, especially something as easy as grilling!
. . IT IS FUN!!!
Our Favorite!!!!!
I have to say, I believe all of our recipes are fantastic! However, we have compiled a list of our absolute favorite grilling recipes that we can't get enough of. These are the recipes that we:
- Make repeatedly
- Tell random people about when we overhear someone say, "What am I going to make for dinner?".
- Explain in detail to the person at the grocery store who's unsure of what to do with salmon
- Invite our neighbors to try
- Absolutely refuse to share even a single bite with our dogs!
Grilling Beef
Our "must-try" beef recipe resulted in a tie between Blue Cheese Stuffed Grilled Flank Steak and Steak Fajitas! These are two completely different dishes, but both offer juicy and flavorful ways of preparing flank steak. The best part is that you can enjoy these dishes guilt-free while on a diet.
Flank steak is known for its rich beef flavor, but it can be tough if overcooked. In this recipe, the steak is cooked to perfect tenderness, and its flavors and juices are sealed in by searing it on the grill. The savory taste of this dish is enhanced by the Blue Cheese-Roasted Garlic-Pepper filling. We have managed to reduce the calorie count while boosting the creaminess by using a blend of Whipped Cream Cheese and Blue Cheese.
Grilled Steak Fajitas are so juicy and delicious, especially when served with homemade Guacamole and Pico de Gallo. These fajitas are perfect for a party or a quiet dinner, and they're so easy to make. And don't forget - the steak and Pico de Gallo are great with scrambled eggs for breakfast, too!!!
How about some Shrimp Tacos with a side of delicious Guacamole, shredded Radish, and a spicy, sour cream sauce that perfectly complements the sweet shrimp? You can make your own tacos, and this dish is perfect for pleasing a crowd. Moreover, shrimp has very few calories but is filling, so you can indulge in an extra glass of wine without any guilt!
Chicken
There's nothing quite like a classic Grilled Chicken Breast. While they might seem unexciting, we almost always include one or two on the grill whenever we barbecue because they are so versatile. From topping a pizza to adding to a salad, they're a reliable and delicious option that will never disappoint. Plus, any leftovers make for a great lunch the next day!

Pizza
Grilled pizza can be a game-changer if you are a pizza lover! Initially, we were hesitant to try grilling pizza, concerned about how the dough would hold up on the grates. But rest assured, it's not as difficult as it seems. In fact, it's quite simple. All we used was store-bought dough (if you have your recipe, do share it with me!). Here are four tips for making great grilled pizza:
- Preheat the grill to get it hot.
- Apply a small amount of olive oil on the grates to prevent sticking.
- Move the coals to the outside of the grill so that you don't cook the dough directly over the hot coals.
- Have all your toppings prepared beforehand so you can work quickly when it's time to add them. So, go ahead and try grilling pizza next time. You won't be disappointed.
Grilled Pizza – Shrimp, Asparagus, Mushroom
You'll be surprised at how easy this dish is to prepare! The shrimp's sweetness is accentuated by the goat cheese, which provides an extra touch of creaminess, creating a perfect balance with the crispy crust and asparagus.
As a special treat, I would like to introduce you to my recipe for Pizza Stuffed Portobello Mushrooms. Though not a complete pizza, these grilled stuffed mushrooms will give you the same satisfaction of having eaten pizza, but without the added calories from the crust. And if you're watching your calorie intake, no crust means you can add more cheese!
Bonus
Don't forget to have a signature drink for your summer grill party. A White Sangria recipe would be an excellent choice as it's refreshing and crisp, perfect for the summer season. Your guests and you will surely love it and ask for more! Remember to add ice and fruits to each glass for an added touch of freshness.
