Grilled Spicy Pesto Pizza

I never imagined grilling pizza crust, but I was pleasantly surprised by how much I enjoyed it. I knew that a spicy pesto pizza would be delicious, but the unique flavor that grilling adds was truly amazing.

Despite the fact that the crust may look burnt, it tastes perfectly fine - in fact, it's incredibly yummy! I hope you will love this spicy pesto pizza just as much as we do. 

This recipe can also be used to make a baked crust if you prefer not to grill. Follow the baking instructions to achieve great results. This recipe captures the essence of summer and can be enjoyed all year round.

What we have figured out when grilling pizza.

When grilling pizza, it's best not to "force-flip" the crust. Wait until the crust is fully cooked, and it will flip easily without any extra effort. If you're using a charcoal grill, avoid placing too many coals directly under the crust. It's crucial to keep a close eye on the pizza, as the crust will cook quickly. Even if it looks burnt, don't throw it out right away, unless it's severely overcooked. Just monitor it and enjoy the process! And, of course, it's always best to pair your pizza with a nice glass of wine while grilling. Our first attempt at grilling pizza was a success, and we thoroughly enjoyed both the pizza and the wine!!

We made a homemade, lower-calorie Basil Pesto that is simply delicious. It's a pizza recipe that I have been making for years, and the taste is just amazing. The addition of feta cheese to the pizza adds a wonderful flavor that blends perfectly with the pesto and chicken. It's a fresh and flavorful dish that also reheats well. 

We love to make grilled or roasted chicken breast, adding our favorite seasoning to the chicken and then grilling or baking it. We used "Slap Ya Mama" and Adobe seasoning with a splash of lemon, about a teaspoon on each side. 

Another thing I like to do is put lemon pepper on the chicken breast and use it for this spicy pesto pizza. Alternatively, if you're short on time, you can buy a rotisserie chicken. Any chicken you use will taste great on this pizza, but the spicy pesto is definitely the star of the show.

When it comes to pizza, we love to get creative with toppings. One of our favorite combinations is adding sautéed mushrooms to a pesto pizza. The richness of the mushrooms and the bold flavor of the pesto come together to create an unforgettable taste.

It's important to cook the crust first, even if you're grilling it. Don't worry if it looks a little burnt, it will still taste amazing. The crust is chewy and full of flavor, and it's the perfect base for your toppings.

To build your pizza, start with the pesto and spread it evenly over the crust. Add some grilled chicken for protein, and then top it off with a generous amount of cheese. We know cheese has calories, but it's essential for the taste of the pizza. We believe in indulging in the full-flavor experience, so we recommend adding some spice and other herbs to cut down on calories while still keeping the full-flavor

Ingredients

  • ½ Cup Pesto
  • 1 Pizza dough Cook per the package instructions
  • 1 Chicken Breast about 8 oz Bake, grill, or rotisserie
  • ½ Cup Feta Cheese
  • ¼ Cup Parmesan cheese

Instructions

  • Grill or bake pizza crust. If you grill just watch it and flip the crust over when it releases from the gill. (about 5 minutes)If baking, follow the package directions
  • If grilling after you flip the crust on the grill add the other ingredients as shown below. When baking follow the instruction to bake the crust and then follow the instructions below
  • Add the pesto first to the crust
  • Cut the chicken into bite size pieces and add to the pizza on top of the pesto
  • Add the cheeses to the top of the pizza
  • Cook until the top is golden brown. If grilling cover the grill to finish cooking. About 5 minutes.
  • Enjoy!!!!
