During summer, we enjoy having breakfast bagels with tomatoes from our garden. I understand that you might be concerned that having a bagel might not be suitable for your diet, and this might make you feel hungry. However, it is possible to have bagels on a diet, just not every day. If you keep track of your food intake and hold yourself accountable, you can indulge in the foods that you love. It is important to remind yourself that you don't eat this every day; eat it slow and savor every bite.
Breakfast Bagels
The taste of cherry tomatoes is simply irresistible, and when combined with my favorite breakfast food, a bagel with bacon, it's like a match made in heaven. The moment the tomatoes ripen, I crave a breakfast bagel with juicy cherry tomatoes, creamy cream cheese, flavorful jalapenos, and crispy bacon. It's the perfect balance of flavors, and it never gets old.
We started growing tomato and pepper seeds indoors in February, and it was a success! We now have a beautiful patio garden full of luscious tomatoes and peppers. It's so exciting to see the fruits of our labor. As soon as the tomatoes ripen, we harvest them and add them to our breakfast bagels. To enjoy the perfect breakfast bagel, we add cream cheese, jalapenos, and cherry tomatoes. And for an extra burst of flavor and crunch, we add some crispy bacon.
We cook one serving per person (some days, we make 1 ½ servings of bacon!) and make it to our liking. If someone prefers it crispy, then we make it crispy.
Lastly, we keep track of everything we eat to ensure we're staying within our goals. Whether it's using an app, jotting it down in a notebook, or using a scrap of paper, keeping track of our food intake is the key to meeting our weight loss goals.
Patio Gardens are amazing.
Gardens are so much fun and very relaxing. We had an amazing garden at our house in Maine. The plants were so happy. This might have been the most satisfying garden we have ever had.
We have always either grown a garden in our yard or bought fresh veggies and fruits from the local farmers' market during summer. However, our yard in Ohio is surrounded by trees, which means we don't have direct sunlight for a garden spot unless we place it in the middle of the yard. But, with our four big dogs, we can't afford to lose the middle of the yard. Besides, they might dig in the garden if we create one there.
So, we decided to try a patio garden instead. To be honest, this may be the best way to grow tomatoes, peppers, and herbs. They are easy to water, require no weeding, and can be moved easily. We planted three different types of cherry tomatoes and two types of heirloom tomatoes. My favorite is the midnight snack cherry tomato, which is black on the bottom and red on top. They taste amazing, and I love to pick them fresh off the plants and pop them in my mouth. The only thing we can't grow in our patio is corn. But since Ohio has the best corn, we can easily find it everywhere, so we don't miss it much!

When the bacon is ready, take the bagel and toast it to your desired level of crispiness. Spread the cream cheese on the bagel, ensuring you measure it correctly, as adding too much can overpower the other flavors.
Now comes the exciting part. Place the crispy bacon strips on the creamy spread, and then pile on the sliced cherry tomatoes and jalapeños, adding color and texture to the dish. Finally, add salt and pepper to your taste, and you are ready to enjoy your scrumptious meal.
