Caprese grilled cheese pesto sandwich!!!! That's right; this sandwich combines ooey gooey mozzarella cheese, homegrown vine-ripened tomatoes, fresh basil lemon pesto, and baby spinach tossed in light balsamic vinegar (jalapeño for a little spice), all between two grilled slices of artisan sourdough bread.

Artisan Sourdough Bread

There's nothing better than a sandwich made with sourdough bread. Who doesn't love the smell of fresh baked bread. One of my favorite childhood memories is when my mom made homemade bread, the house smelled amazing and we couldn't wait to dig in.

I was an adult before I ever tried sourdough bread and I totally fell in love with the complex flavors and textures. I would love to have the time to make homemade sourdough bread but, let's face it, that's just not happening. Especially in the summertime!! Unfortunately, we have a hard time finding great tasty bread at the grocery store. That's why we were so excited to find the Wildgrain Subscription Bread Box. So now we can have fresh sourdough bread at any time. Not to mention all the other goodies that come in the box for all our summertime eating enjoyment.

The Wildgrain subscription bread box is a must have for summertime! It has everything needed for those times when you want to make a fun caprese grilled cheese pesto sandwich, toast for breakfast, a quick poolside sandwich, or an easy pasta dish the entire family will love. Use your imagination and always have great bread and pasta with this club membership.

Wildgrain Monthly Subscription

One thing we love is that small-batch bakers and pasta makers across the country partner with Wildgrain to provide nutritious artisanal bread, pasta, and pastries in a monthly themed subscription box that's too delicious to resist.

Summer is the ideal time to start baking up some delicious pastries and breads with Wildgrain's signature subscription box! Wildgrain is perfect for quick lunches by the pool, glamping, and all-summer entertaining.

The Wildgrain monthly subscription service sends great goodies that are placed in the freezer until you're ready to have homemade baked bread or pasta. Just pop the bread in the oven (no thawing necessary) and in a few minutes your house has that fresh-baked bread smell.

What do you get with a Wildgrain Subscription?

First, make sure to use this link with code BLL10 for $10 off your first Wildgrain box. You're gonna love this!!! For example, in our Wildgrain box, we received: a Plain Sourdough loaf which we made this delicious caprese grilled cheese pesto sandwich, and a bacon and egg breakfast sandwich (details on that later)... a walnut sourdough loaf, which is going to be perfect for our family glamping trip charcuterie board. A slow fermented olive oil ciabatta that is going to be baked and ready for a Friday night martini night. The Fettuccine Pasta we made with some grilled shrimp and enjoyed with our sandwiches. We also received some Tonnarelli Pasta, which is going to be perfect with some grilled summer veggies. The box even came with some adorable macarons. So perfect for a summer afternoon treat.

To top it off, we even received some croissants. I'm looking forward to popping these bad boys in the oven and enjoying a quiet breakfast on the patio with an iced coffee, a croissant, and fresh tomatoes topped with some chopped basil.

Summertime is the perfect time to have baked bread, pastries, and pasta on hand. They are quintessential for those backyard BBQ's, or camping/glamping trips.

How to make the Caprese Grilled Cheese Pesto Sandwich

First of all, having homemade sourdough bread to make this sandwich is the best part. The first step is to remove the Wildgrain sourdough bread from the freezer and pop it in the oven for a few minutes. The directions to make the bread are on the package. (Remember use this link and code BLL10 for a $10 discount on your first box)

Slice the bread as thin or thick as you want. The crispy bread has a nice crust on the outside and is so soft in the middle. It's hard not to eat a hot piece of bread with some melted butter before making the sandwich!

Spread a nice thick layer of pesto on the bread. Pesto can be purchased at the store or, if you're like us, make fresh homemade pesto. You can add as much lemon or spices as you want when you make it yourself. Click here for our spicy pesto recipe.

Next, add the cheese. We use fresh mozzarella cheese. It melts really nice and goes great with the sourdough bread and pesto.

If you want a little spice add sliced jalapeños. The Jalapeños aren't necessary but they do add a nice kick.

Then add the sliced tomatoes. Isn't it great to have fresh vine-ripened tomatoes in the summertime? This sandwich really screams summer to me.

Toss the spinach with the balsamic vinegar and some salt and pepper. I like to splurge and purchase a nice balsamic vinegar for a sandwich like this. I mean when you have great bread, pesto, and fresh mozzarella, why cut back!!!

After tossing the spinach with the dressing. Place it on top of the tomatoes.

Top with the other piece of sourdough bread. Now, you could eat this sandwich just like this, but we found grilling it really brings out all those great summertime flavors and melts all that cheese.

Caprese grilled cheese pesto sandwich

Next step for the Caprese grilled cheese pesto sandwich - Lightly butter the bread and place directly on the grill or in a pan.

Grill until the bread has toasted. Be careful if using a charcoal grill it can flare up from the butter (yes, that's a lesson learned!!). Once the bread is toasted, flip it over and grill the other side. The cheese will be nice and melted, and the bread will have a toasty crunch on the outside and be soft in the middle.

For a quick summer meal, serve this caprese grilled cheese pesto sandwich with a side of pasta. The Wildgrain pasta is cooked directly from the freezer and takes about 6 minutes. Then it's ready to eat! We tossed ours with some olive oil and lemon juice and topped with some grilled shrimp.
