There's nothing better than a sandwich made with sourdough bread. Who doesn't love the smell of fresh baked bread. One of my favorite childhood memories is when my mom made homemade bread, the house smelled amazing and we couldn't wait to dig in.
I was an adult before I ever tried sourdough bread and I totally fell in love with the complex flavors and textures. I would love to have the time to make homemade sourdough bread but, let's face it, that's just not happening. Especially in the summertime!! How to make the Caprese Grilled Cheese Pesto Sandwich
First of all, having homemade sourdough bread to make this sandwich is the best part. The first step is to remove the Wildgrain sourdough bread from the freezer and pop it in the oven for a few minutes. The directions to make the bread are on the package. Slice the bread as thin or thick as you want. The crispy bread has a nice crust on the outside and is so soft in the middle. It's hard not to eat a hot piece of bread with some melted butter before making the sandwich!
Spread a nice thick layer of pesto on the bread. Pesto can be purchased at the store or, if you're like us, make fresh homemade pesto. You can add as much lemon or spices as you want when you make it yourself. Click here for our spicy pesto recipe.
Caprese Grilled Cheese Pesto Sandwich
Next, add the cheese. We use fresh mozzarella cheese. It melts really nice and goes great with the sourdough bread and pesto.
If you want a little spice add sliced jalapeños. The Jalapeños aren't necessary but they do add a nice kick.
Then add the sliced tomatoes. Isn't it great to have fresh vine-ripened tomatoes in the summertime? This sandwich really screams summer to me.
Toss the spinach with the balsamic vinegar and some salt and pepper. I like to splurge and purchase a nice balsamic vinegar for a sandwich like this. I mean when you have great bread, pesto, and fresh mozzarella, why cut back!!!
After tossing the spinach with the dressing. Place it on top of the tomatoes.
Top with the other piece of sourdough bread. Now, you could eat this sandwich just like this, but we found grilling it really brings out all those great summertime flavors and melts all that cheese.
Next step for the Caprese grilled cheese pesto sandwich - Lightly butter the bread and place directly on the grill or in a pan.
Grill until the bread has toasted. Be careful if using a charcoal grill it can flare up from the butter (yes, that's a lesson learned!!). Once the bread is toasted, flip it over and grill the other side. The cheese will be nice and melted, and the bread will have a toasty crunch on the outside and be soft in the middle.
For a quick summer meal, serve this caprese grilled cheese pesto sandwich with a side of pasta. The Wildgrain pasta is cooked directly from the freezer and takes about 6 minutes. Then it's ready to eat! We tossed ours with some olive oil and lemon juice and topped with some grilled shrimp.

Caprese Grilled Cheese Pesto Sandwich
Ingredients
- 4 Slices Wildgrain Sourdough Bread
- 2 Tablespoons Pesto
- 2 Ounces Mozzarella Cheese
- 2 Tomatoes
- 1 Jalapeño Optional
- 2 Cups Baby Spinach
- 1 Tablespoon Balsamic Vinegar
- ½ teaspoon Salt
- Pepper to taste
- ½ Tablespoon Butter
Instructions
Prep the Ingredients
- Bake sourdough bread according to package instructions
- Slice the sourdough bread as thick (or thin) as you want
- Slice the tomatoes, jalapeños (optional), and mozzarella cheese
- Toss the baby spinach with the balsamic vinegar, salt, and pepper
Build the Sandwich
- For each sandwich, spread pesto on one side of the sourdough bread slice
- Place the cheese on top of the pesto
- Place the sliced tomatoes on top of the cheese
- Add the jalapeños, if using
- Place the dressed spinach on top
- Top with the other slice of sourdough bread
Grill the Sandwich
- Butter the bread. Place butter side down on the grill or in a pan
- Grill until the bread is toasted, about 3 to 5 minutes (This all depends on how hot the grill is)
- Butter the top of the sandwich and carefully flip the sandwich on the grill to cook the other side
- Grill until the bread is toasted, about 3 to 5 minutes
- Cut in half and Enjoy!!!!
