When cooking risotto, you want to use a good white wine. Use a wine that you will enjoy drinking. Because I would NEVER want the wine to go to waste, I enjoyed it while cooking the Risotto. It can take some time to cook, up to 45 minutes, but it's totally worth it! To make the process even more enjoyable, you can take sips of wine while stirring. I even made a game out of it, only allowing myself to drink wine while stirring so I wouldn't forget about either the risotto or the wine.

You might be wondering about the inspiration behind our Spicy Cheesy Mushroom Risotto dish; let us take you on a journey. It all began with a simple suggestion to make Risotto, but we wanted to add our own unique twist to it. We thought about the ingredients we had available and the flavors we loved, and that's when the magic began.
The conversation went something like this.
- "Let's make Risotto," we said.
- "Sounds great, can we use our hot peppers?" And just like that, our Spicy Risotto was born.
- "OK, well, I love feta and Parmesan cheese in my Risotto,” And so, we added the cheeses to create our Cheesy Risotto.
- "We have those great shiitake mushrooms," Amy pointed out.
- And with that, our Cheesy Mushroom Risotto was complete. But it didn't stop there. We wanted something with a bit more kick, something that would make our taste buds dance. So, we added a few more peppers, and our Spicy Cheesy Mushroom Risotto was created.
And that, my friends, is the story behind our Risotto dish.
Spicy
We understand that this Risotto recipe may seem a bit unconventional to some. However, we pride ourselves on being unique recipe developers. Although Thai chilies may not be a common ingredient in traditional Risotto recipes, we decided to add them because we love them and spicy food. And we are happy that we did because it was a great change to the traditional recipe. Of course, the peppers are optional for those who prefer a milder taste.
To be honest, ever since we found Thai peppers at the grocery store the other day, we've been adding them to everything! They are really spicy and fruity and go with pretty much anything. Both of us tend to be on the extreme side and go all in with things we love. Last summer, we discovered that we loved grilling large Portobello mushrooms. We made them every other night in several different ways, such as Ultimate Mushroom Pizza, Grilled Mushrooms a steak lover will want, Blue Cheeseburger Mushrooms, Swiss Cheese and Cauliflower, and several others We couldn't stop!
Cheesy
As I mentioned earlier, we wanted to make our mushroom risotto cheesy. In the past, we have used feta cheese mostly because it was the only cheese we had in the fridge at that time. Although feta cheese may not be considered "traditional", it adds a nice creamy and salty flavor that enhances the texture of the rice.
Mushroom Risotto
Lately, we have been obsessed with mushrooms, specifically shiitake mushrooms. They are meaty and savory, and they add a nice flavor to everything we have tried them in. We even used them in homemade pasta the other day, and they were fantastic. We decided to make them again, and it worked perfectly. The shiitake mushrooms added a buttery, earthy flavor without overpowering the dish. The best thing about shiitake mushrooms is that they enhance the other flavors in the dish. We sauteed them in a little bit of olive oil and garlic, and the mushrooms absorbed all of that garlicky deliciousness.

The Best Cheesy Mushroom Risotto You'll Ever Taste
Ingredients
Risotto
- 1 Tablespoon Olive Oil
- 1 Shallot
- 2 Cloves Garlic Or 2 Tablespoons Roasted Garlic
- 2 teaspoon Salt
- 2 Cups Arborio Rice
- 1 Cup White Wine
- 6 Cups Chicken stock
- 8 Ounces Feta Cheese
- 10 Thai Peppers OPTIONAL
Mushrooms
- 8 Ounces Shiitake Mushrooms
- 1 Tablespoon Olive Oil
- 1 Clove Garlic or ½ Tablespoon Roasted Garlic
- 1 Tablespoon Sherry
- ½ teaspoon Sea Salt
Instructions
Risotto
- Chop Shallot and Garlic. Using a heavy saucepan, heat Olive oil and add chopped shallot, garlic, and salt. Add the rice to the pan when the shallots are soft and translucent.1 Tablespoon Olive Oil, 1 Shallot, 2 Cloves Garlic, 2 teaspoon Salt
- Stir the Arborio rice for about 3 minutes or until the rice has a light golden color.2 Cups Arborio Rice
- Add the Wine to the rice. Set the burner on simmer (or low) and stir slowly until the rice absorbs the wine. The key here is to stir, stir, stir!1 Cup White Wine
- After the wine is absorbed, add one cup of chicken stock and continue stirring over low heat until the stock has been absorbed. It takes about 6 to 8 minutes for each cup of broth to absorb into the rice.6 Cups Chicken stock
- Keep adding the stock one cup at a time, making sure the stock is absorbed completely before adding another cup of stock. Keep stirring until all 6 cups of broth have been added to the Arborio rice. While the rice is cooking, saute the mushrooms.
- After the last cup of stock is absorbed, stir in the feta cheese. Taste and add additional salt if needed8 Ounces Feta Cheese
Mushrooms
- Heat 1 tablespoon of olive oil in a saute pan. Add 1 clove of garlic or ½ tablespoon of roasted garlic and saute. Add sliced mushrooms and cook until tender.1 Tablespoon Olive Oil, 1 Clove Garlic
- If mushrooms begin to stick, add 2 tablespoons of water to the pan.8 Ounces Shiitake Mushrooms
- When the mushrooms are golden in color and softened add the Sherry and ½ teaspoon sea salt.1 Tablespoon Sherry, ½ teaspoon Sea Salt
- Toss the mushrooms until the sherry is absorbed and remove them from the heat.
Final Dish
- Add Risotto to the plate and top with a sprinkle of parmesan cheese
- Add Sauteed Mushrooms on top of Risotto
- If adding hot peppers sprinkle them on top of the Risotto8 Ounces Shiitake Mushrooms
- Serve and enjoy! Make sure to pair it with your favorite wine. We served it with asparagus and sometimes lamb or chicken, which can also be enjoyed alone as a dinner.
