Chicken Posole or Pozole soup, what's the difference? Personally, I think the flavor is what really matters, but I usually go with "Posole"! If you haven't tried it before, Posole is a delicious soup/stew made with hominy and lots of yummy spices. This chicken posole soup recipe uses canned hominy to make a quick and flavorful dish.
I did google what's the difference between posole and pozole and here's the result I got "There's really no big difference between pozole and posole, except a letter. In Mexico, where the brothy, chile-spiked soup originated, it's often spelled with a "z"; near the border and beyond, it's often spelled with an "s." It just depends where you are, and who taught you to cook it."
This chicken Posole soup recipe is packed with flavor and will have you coming back for more with every bite. We love to add our favorite toppings to the soup. This time, we went with cilantro and radish because they were what we had on hand. The radish gave it a nice kick and crunch. It's also delicious with avocados and green onions. Personally, my top choice is always cilantro, but if you're not a fan, you can swap it out for flat-leaf parsley.
How to make this Chicken Posole (Pozole) recipe
First, start by sautéing the chicken breast and letting it slowly roast for a couple of hours. If you've got some leftover cooked chicken or picked up a rotisserie chicken at the grocery store (they're so tasty, right?), feel free to skip this step. Then, mix together the spices: cumin, chicken bouillon, oregano, garlic powder, salt, and chili powder
Sprinkle one or two tablespoons of the spice mix and massage it onto the chicken breast. Then, warm up a tablespoon of olive oil in a sauté pan and pan-sear the chicken breast. (If you're using leftover cooked or rotisserie chicken, you can skip this step.)
Once the chicken is nicely seared on both sides, transfer it to a casserole dish. Next, pour in ½ cup of water into the saute pan to capture all those delicious spices. Then, pour the water and spices over the chicken in the casserole dish. We use water instead of oil to enhance the flavors and cut down on calories. It's a simple way to make the dish healthier without compromising on taste. Also, you can use chicken thighs instead of chicken breasts if you prefer. We opt for skinless chicken breasts to keep the dish lower in calories.
Cover the casserole dish with foil and pop it in a 350-degree oven. Let the chicken breast bake for 2 hours. Once it's done, allow the chicken to cool down, and then use a fork to shred it. The chicken will practically fall apart! If you're using leftover cooked chicken or rotisserie chicken, just chop or shred it to get it ready for the soup..
Making the Soup/Stew
Start by sautéing the onion in some delicious olive oil until it becomes soft. Then, add the rest of the spices and sauté for a minute to release their wonderful aroma. Next, pour in the chicken broth and 2 cups of water, and bring everything to a nice, gentle boil. Once that's done, add the shredded chicken (or some yummy leftover/rotisserie chicken that's been shredded or chopped), bring it back to a boil, and then let it simmer for at least 30 minutes.
Add the chilies and hominy to the broth and chicken. Let the Chicken Posole simmer for an extra 30 minutes.

Chicken Posole vs Pozole: A Flavorful Soup!
Ingredients
- 2 Pounds Chicken Breast
- 1 Tablespoon Olive Oil
- 2 Tablespoons Cumin
- 1 Tablespoon Chicken Bouillon
- 2 teaspoons Garlic Powder
- 1 Tablespoon Dried Oregano
- 1 teaspoon Salt
- 1 Tablespoon Chili Powder
- ½ Tablespoon Olive Oil
- 1 Large Onion
- 31 Ounces Hominy (2 - 15 ½ Ounce Cans) Drained
- 8 Ounces Green Chilies Canned or Roasted
- 32 Ounces Chicken Broth
Instructions
- Preheat the oven to 350 degrees. Mix together the spices. (Cumin, Chicken Bouillon, Garlic Powder, Oregano, Salt, Chili Powder)2 Tablespoons Cumin, 1 Tablespoon Chicken Bouillon, 2 teaspoons Garlic Powder, 1 Tablespoon Dried Oregano, 1 teaspoon Salt, 1 Tablespoon Chili Powder
- Coat each chicken breast with 1 Tablespoon of the spices (reserve the rest of the spice mix)2 Pounds Chicken Breast
- Put 1 Tablespoon olive oil in a saute pan. Sear the chicken over medium heat for a couple of minutes1 Tablespoon Olive Oil
- Flip the chicken over. Sear the chicken on the other side.
- Place the chicken in a casserole dish.
- Add ½ Cup of water to the saute pan and heat. This will remove all the spices that have stuck to the pan. (a little trick to save on using a lot of oil)
- Pour the water from the saute pan over the chicken in the casserole dish. Cover the dish with aluminum foil.
- Bake the chicken for 2 hours. The chicken is going to fall apart.
- Shred the chicken with a fork
- Chop onion. In a large pot add ½ Tablespoon olive oil and the chopped onions. Saute onions for about 3 minutes.½ Tablespoon Olive Oil, 1 Large Onion
- Add the remaining spice mix to the onion. Continue to saute for about one minute.
- Add the chicken broth and 2 Cups of water.32 Ounces Chicken Broth
- Add the shredded chicken to the broth. Bring to a boil and then turn down to simmer for 30 minutes
- Drain the canned hominy and discard the liquid. Add the hominy and chilies to the soup. Simmer for 30 minutes to infuse all the spices into the hominy.31 Ounces Hominy, 8 Ounces Green Chilies
- Place Posole in bowls
- Sprinkle your favorite topping on each bowl. We like cilantro, radishes, avocado or non-fat sour cream
- Serve and enjoy with a beer!
