I'm so excited that soup season has started! We enjoy a variety of soups, but Chicken Tortilla Soup is always a fun one to make. It's versatile, as you can add toppings like avocado, cilantro, chopped tomatoes, green onions, and more, depending on your mood. It's like creating a different dish for each family member. You can even spice up individual servings with hot peppers. We usually stick to fresh herbs for the toppings, giving the soup a bright flavor and a nice reminder of the herby dishes we enjoy during the summertime.
So Many Soups, So Little Time!
Soups are incredibly easy to make, and it's also easy to reduce calories. One of the reasons why I enjoy making soup is the challenge of finding ways to cut calories while adding flavor using spices and fresh herbs.
Another favorite of mine is chicken vegetable soup, which is both low in fat and filling due to the abundance of vegetables and chicken. The soup is brightly colored and has a great taste.
Don't get bored with leftover Chicken - Make this Chicken Tortilla Soup!!!!
Yesterday, for dinner, we made a roasted chicken, which turned out to be amazing. There was a lot of leftover chicken, so we removed all the meat from the chicken and cut it into bite-size pieces. We then made homemade chicken broth that was simple to make, cost-effective, and only took an hour to cook. Then we boiled the bones in 8 to 10 cups of water and let it simmer for an hour to extract all the flavors. After that, we strained the bones out and were left with a rich, clear broth perfect for our soup.
Making Chicken Tortilla soup is incredibly simple, using leftover chicken and homemade broth. However, in case you are short on time or don't have homemade broth, you can always use store-bought chicken broth. If you don't have any leftover chicken, you can take a couple of large chicken breasts (about 1 pound) and chop them into small chunks. Put the chicken in a stockpot and sauté. When the chicken is almost cooked, add the spices.
Leftover chicken or rotisserie chicken
If you're short on time, a rotisserie chicken is a great option for this recipe. Remove the meat from the chicken and chop or pull it apart into bite-sized pieces. Follow the steps below to make the soup.
Start by placing it in a large stock pot with the spices. Sauté the chicken and spices for a few minutes. The oregano, cumin, chicken bouillon, and one clove of garlic will release their flavors and blend with the chicken, resulting in a delicious soup. It's amazing how such a simple step, like sautéing the spices with the chicken, can bring out so much flavor!
Add chicken broth to chicken and simmer for 15 mins. Then add diced tomatoes and green chilies (Anaheim or Hatch Chiles) and simmer for another 15 minutes.
While the chicken tortilla soup is simmering, you can make the tortilla chips. Start by taking corn tortillas and cutting them into strips. Next, place the strips on a cookie sheet, sprinkle them with salt, and put them in a preheated oven at 400°F. Chicken Tortilla Soup Another Use for Leftover Chicken
Ingredients
- 1 Pound Chicken Leftover chicken is great to use
- 8 Cups Chicken Broth
- 1 teaspoon Dried Oregano
- ½ teaspoon Black Pepper
- 2 teaspoon Cumin
- 2 teaspoon chicken bouillon
- 1 Garlic Large clove
- 1 green chillies Can chopped
- 14.5 Ounces Diced tomatoes Canned tomatoes
- Cilantro
- Green Onions
- 2 Ounces Cheddar Cheese
- 2 Tablespoon Cream Cheese (Whipped)
Instructions
- If using raw chicken. Cut into bite size pieces. Cook in sock pot. If using leftover chicken cut the chicken into bite size pieces and heat up in stock pot. Add the spices to the chicken (Oregano, black pepper, cumin, chicken bouillon, garlic) and Sauté for about 5 minutes. This will smell amazing! Add the chicken broth. Bring to a boil and simmer for 30 minutes. Add the green chillies and diced tomatoes.
- Cut corn tortilla in strips. Bake in oven at 400 degrees for about 5 minutes until crunchy.
- If using cheese as a topping. Mix together 2 ounces cheddar cheese and 2 tablespoons whipped cream cheese.
- Serve with your favorite toppings. We like cilantro, chopped green onions, and cheese.
