Don't Tell Frank!
Please don't tell Frank he isn't Irish. He was so happy to put on his green bow tie. He is just proud of his sparkly new look!! I'll never forget when we lived in Japan, a friend of mine had to go to a black tie event. He looked good. One of his Japanese peers told him he looked "Bow Tie!". It was a great compliment. Well, I think Frank looks "Bow Tie!" today.
By the way - Frank is part Australian Collie . . .No Irish Setter in him (but don't tell him today)!!! He was so happy and did NOT want to take the Bow Tie off!!!

Amy really loves a good poached egg, especially when it's part of an eggs benedict. We've come up with a quick and easy breakfast that's similar to benedict but with juicy corned beef on rye toast and a poached egg on top. It's so delicious that you won't even miss the hollandaise sauce.

The other fantastic dish we made was The World's Best Reuben Sandwich with a low-fat (and a little bit spicy) Homemade Thousand Island Dressing. Corned Beef Hash is a classic breakfast. I always thought the only way to make it was with canned corned beef. In fact, we even have a special recipe for making corned beef hash in the air fryer with canned corned beef. This time, we decided to try a corned beef hash with our homemade corned beef. This breakfast is a must-make!
Of course, we wanted to make our homemade corned beef hash a little healthier, so we used less oil and added eggs to make it more filling. It's a satisfying meal, and you won't need to eat a lot to feel full and happy.
