During the summer, we always end up with so much basil! And that's perfect because we love making pesto with it. We use Pesto in all sorts of yummy dishes, like Pesto pasta with garlic and lemon, Spicy pesto Chicken pizza, Zucchini pesto pasta, Air Fryer Pesto Shrimp, Pesto Cauliflower rice, Shrimp Pesto Pasta Salad, and even Pesto Portobello mushrooms. Plus, we also enjoy adding basil to sandwiches, sauces, and especially fresh tomatoes. So why not try a new creamy basil pesto sauce?
This sauce is a unique blend of fresh herbs, lemon juice, garlic, and non-fat cottage cheese. It's a perfect accompaniment for those on a calorie-cutting diet who still want great bold flavor. By eliminating oil, cheese, and nuts, this sauce is a low-calorie option. It's like basil pesto and cottage cheese became best friends, and they bought a tandem bike and started going everywhere together!!!!
Creamy Basil Pesto Sauce
We used this sauce on sandwiches and in a summer squash casserole. The bold spices make the oil unnecessary. Although it's not traditional pesto, it complements sandwiches perfectly. I can turn a boring sandwich into a flavor bomb by adding this creamy basil pesto sauce, and I can add as much as I want
This sandwich was made with an individual-sized loaf of bread. We were so lucky to find this at the grocery store. The best part was that they had just put the bread out, and it was still warm. We put the creamy basil pesto sauce on both sides and then added some fresh cherry tomatoes and some leftover chicken. The flavors were unbelievable, especially with a glass of wine!!!!

In a food processor, add all the ingredients: Basil, Parsley, Garlic, Lemon juice and zest, Non-fat Cottage Cheese, and salt. And for the spice, we added a habanero. The pepper is totally optional.

A Few Things We Use
Ingredients
- 2 Cups Basil
- 1 Clove Garlic
- 1 Cup Parsley
- 1 Lemon - Juice and Zest
- 1 teaspoon Salt
- 1 ½ Cups Non-Fat Cottage Cheese
- 1 Habanero Optional
Instructions
- Chop the garlic in a food processor.
- Add the Basil and Parsley to the food processor.
- Add the lemon zest and juice to the food processor.
- Add the Cottage Cheese, Salt, and Habanero to the food processor.
- Blend all the ingredients until it is a smooth and luscious sauce.
- Enjoy on sandwiches or in a casserole, or as a dip with bread and veggies.
