Crunchy Air Fryer Chicken Parmesan with Spaghetti Squash

Yes, Chicken Parmesan in the Air Fryer!!!! We are totally obsessed with this yummy chicken Parmesan. Who says you can't have Chicken Parm on a diet? They are wrong. This chicken recipe is so quick and easy to make! Also, it will surprise everyone that it's lower in fat and, yes, it was made in an air fryer, the chicken turns out crispy, juicy, and oh-so cheesy.

Who Doesn't want a Warm Chicken Parmesan in the winter!!!

It has been a strange winter. Now, as many of you know, we moved back to the Cleveland area to be closer to family and because we missed the snow. Yes, I know we're a little weird, but we absolutely love the snow.. So we bought a house right in the middle of the snowbelt. Unfortunately, this year there is very little snow, lots of cold but little snow. It seems like when a storm heads our way, it gets warm, and we get rain. Anyway, we love our house and the area so much that we can e can overlook the rain. One day, after being stuck inside, we came up with the idea, "Why not cook at least one meal each day using the air fryer?"   This might have been one of our best ideas ever!!  So this is how Air Fryer February began!!!!

Air Fryer Chicken Parmesan

We've never attempted to make Chicken Parm before, so we decided to try making it in an air fryer. Whenever we dine out, we always end up ordering this dish - crispy chicken, smothered in marinara sauce, and topped with a ton of mozzarella cheese - it's simply irresistible! To make ours even healthier, we opted for Spaghetti Squash instead of pasta, and the combination of Crispy Chicken Parmesan and Spaghetti Squash is truly a match made in heaven.

Chicken Parmesan or Chicken Parmigiana

While we were totally enjoying our delicious Chicken Parmesan, we got into a debate of what we should call it. . .Is it Chicken Parmesan or Chicken Parmigiana? Since I wrote this post we called it Chicken Parmesan!!! Regardless of the name, this dish is sure to satisfy any lover of Chicken Parmesan/parmigiana.

Serve this with your favorite Chianti wine and crusty bread. Ok, this might not all be on your diet, so just cut out the bread!!!

Tips:

  1. The Spaghetti Squash can be cooked a day ahead. This will save you plenty of time and effort in the kitchen when making the chicken Parmesan.
  2. Purchase a high-quality jar of Spaghetti Sauce. You want a sauce that is packed with flavor and complements the dish well. 
  3. To prepare the breaded chicken, you can do so a day before as well. This will give it enough time to marinate and provide a more delectable taste. 
  4. For the cheese, it's essential to measure it correctly. Cut back on the amount of cheese if you're trying to reduce calories. However, even with less cheese, the dish will still be delicious! 
  5. Use Italian seasoned bread crumbs. We recommend Progresso Panko bread crumbs Italian Style, as they add an extra burst of flavor to the dish.

If the Spaghetti Squash is prepared the day before, this amazing dinner can be ready in 25 minutes. Make sure to allow room for a nice glass of wine!!!

Ingredients

  • 2 Chicken breast
  • 1 Egg
  • ½ Cup Italian Bread Crumbs or Panko
  • 1 teaspoon Oregano
  • 3 Ounces Low-fat mozzarella Cheese
  • 2 Cups Garlic Marinara Sauce
  • 1 Spaghetti Squash
  • 1 teaspoon Olive Oil

Instructions

Spaghetti Squash

  • Preheat Oven to 400 Degrees. Cut the Spaghetti squash lengthwise. Using a spoon, scoop out the seeds

  • To cook spaghetti squash, start by rubbing ¼ teaspoon of olive oil on each half of the squash. Then, place the squash face down on a non-stick foil or parchment paper and bake it for 40 minutes or until the squash is tender. Make sure the spaghetti strands are a little firm to get the best texture.

  • Let the Squash cool for a few minutes. Don't be like me and burn your fingers! Using a fork, scrape the squash, giving you long strands

Air Fry the Chicken

  • Beat one egg in a shallow bowl. Place Bread Crumbs in a Shallow bowl

  • Cut a small slit in the Chicken breast.

  • Insert ½ ounce Mozzarella cheese into the sliced chicken breast.

  • Sprinkle oregano on the chicken breast

  • Roll the chicken breast in the egg

  • Roll the chicken into the bread crumbs. Press the bread crumbs into the chicken breast. Spray the breaded chicken lightly with olive oil

  • Heat Air Fryer to 390 degrees.

  • Cook at 390 degrees for 12 minutes in the Air Fryer. Flip the chicken and cook for a few more minutes. Make sure the chicken reaches 165 degrees.

  • Heat the marinara sauce. Place the air-fried chicken breast on a cookie sheet and add ¼ cup of the marinara sauce on top of each chicken breast.

  • Place 1 ounce of cheese on each chicken breast.

  • Place under broiler to melt cheese

  • Heat the squash in the same pan used to heat up the marinara sauce.

  • Put additional sauce on the serving plate add the spaghetti squash and place the chicken breast on top. Spoon on the remaining sauce as desired

    This looks tasty but might I suggest that you swap cage-free organic for pastured organic. From what I know, it seems like a kinder option!
