Cucumbers with Salmon

- To make this easy appetizer, slice the cucumber into ½ inch slices

Crispy Potato Skins
This is such a fun appetizer. In fact, it's my favorite appetizer recipes!! It's very simple! Since you hollow out the potatoes, the filling can give you a second appetizer. With the potato filling you can make a Martini Mashed Potato Bar Use Yukon gold or other type of small Potato. This is also a great recipe when you have leftover Turkey Chili (or any kind of Chili)
This is a fun and easy recipe for my favorite appetizer! Not only is it simple to make, but you can also use the potato filling to make a second appetizer. If you're feeling creative, you can even turn it into a Martini Mashed Potato Bar! Use a small Potato like a Yukon gold or Russert. This is also a great recipe when you have leftover Turkey Chili (or any kind of Chili). Here's what you'll need to do:
- Preheat your oven to 425°F.
- Wash your potatoes and rub them with olive oil. Sprinkle some coarse salt on them.
- Place your potatoes on a baking sheet and bake them for 45 minutes to an hour, until the potato skin is crispy.
- Let the potatoes cool. You can stop here and refrigerate them if you want to prepare them ahead of time.
- Cut off the top of each potato, about a quarter-inch down.
- Use a spoon to scoop out the potato from the potatoes, being careful to leave a small amount of potato inside.
- Put the potatoes back in the oven for about 10 minutes to make the skin crispy.
- Finally, fill the potatoes with turkey chili, cheese, or both.
- You can also use the potato filling to make mashed potatoes. This is such a fun recipe and perfect for parties. Enjoy!
Best Meatball Sandwich EVER!!!! And Super Easy Appetizer
OK, we love to make Turkey and Chicken Meatballs. First of all, they have little (or no) Weight Watchers Points and you can make an awesome meatball sandwich and not feel guilty!!! For this sandwich, we made an Italian Meatball.
This is one of the best meatball sandwiches I have ever had (or made). It's so simple and extremely satisfying!!! The hardest part of this sandwich is making the Italian Meatballs. And they only take about 10 minutes to make.
- When making Italian Meatballs, it is important to start with high-quality rolls and either a good pizza or spaghetti sauce.
- You can make your own meatballs or use frozen ones.
- Start by slicing the rolls in half, then spread about ¼ cup of the sauce on each roll.
- Next, place the meatballs on top of the sauce and cover with a shredded ¼ cup of mozzarella cheese and a tablespoon of parmesan cheese.
- Finally, place the rolls under the broiler to melt the cheese
