Who doesn't love a delicious and hassle-free dinner? Enchiladas are always a good idea! This recipe puts a twist on the classic by using thinly sliced steak instead of ground beef, which takes it to a whole new level!!
We added a side salad with sweet cherry tomatoes, avocado, and fresh Jalapenos to complement the steak enchiladas. Top the enchiladas with Cotija cheese and cilantro or green onions.
The Cotija cheese has a similar texture to Feta, but with less saltiness. It blends well with the flavors of the sauce, corn tortillas, and steak. If you don't have any Cotija cheese, you can use a small amount of sour cream as a substitute which is also yummy!
How to make Easy Enchiladas with Steak and Cheese
We used thinly sliced to make cooking a bit easier and faster. But if you can't find it, no worries! Just slice the steak into small cubes and cook it with some tasty seasonings and water. Easy peasy!
Place the steak in a sauté pan and cook for 5 minutes. Add Cumin, Garlic Powder, Salt, and optional Cayenne Pepper to the meat. Pour ¼ Cup of water to prevent the spices from sticking. Remove from heat and let cool.
First, chop the onions and grate the cheese. Then, pour the enchilada sauce into a large bowl and dip the corn tortilla into the sauce. Add the cooked steak, onions, and cheese onto the tortilla and roll it up. Place the rolled tortilla seam-side down into a casserole dish. Repeat this process until all the tortillas are in the casserole dish.
Pour the remaining enchilada sauce over the tortillas and sprinkle the top with shredded cheese. Cover with foil and bake at 350 degrees for 30 minutes or until cheese is melted.
After baking for 30 minutes, remove the foil and continue baking for another 15 minutes to allow the cheese to melt completely and the edges to become crispy. This is a favorite!! I mean, who doesn’t love the crunchy bits???

Easy Enchiladas with Steak and Cheese
A Few Things We Use
Ingredients
- 1 ½ Pounds Steak
- 9 Corn Tortillas Use the Large Corn Tortillas
- 28 Ounces Enchilada Sauce
- 1 Medium Onion
- 1 teaspoon Garlic Powder
- 1 teaspoon Cayenne Pepper Optional
- 1 teaspoon Salt
- 1 teaspoon Cumin
- 12 Ounces Colby Jack Cheese Shredded
Instructions
- Slice steak into small bite-size pieces. We purchased a thinly sliced steak and cut it into small pieces. (The kind of steak used to make a Philadelphia cheesesteak sandwich.)1 ½ Pounds Steak
- Preheat oven to 350 degrees. Chop Onions.1 Medium Onion
- Combine Garlic Powder, Cayenne Pepper, Salt, and Cumin.1 teaspoon Garlic Powder, 1 teaspoon Cayenne Pepper, 1 teaspoon Salt, 1 teaspoon Cumin
- Cook the steak in a saute pan. Add spices when it starts cooking. Add ¼ cup water to prevent sticking. Remove from heat and let cool for a few minutes.
- Take a corn tortilla and dip it into the enchilada sauce, making sure to coat both sides.9 Corn Tortillas, 28 Ounces Enchilada Sauce
- Place the tortilla in a casserole dish
- Place a thin layer of cooked steak onto the tortilla.
- Add about a tablespoon of onion on top of the steak
- Add a couple of tablespoons of the cheese on top of the onions
- Roll the tortilla and place it in the casserole dish with the seam side facing downwards.
- Keep repeating this process until you've used up all the steak until the casserole dish is full. If there is space on the side of the dish add a couple of enchiladas.
- Pour the remaining enchilada sauce over the corn tortillas
- Sprinkle the remaining cheese on top of the enchiladas12 Ounces Colby Jack Cheese
- To bake the enchiladas, cover them with foil and place them in a preheated 350-degree oven. Let them bake for 25 minutes.
- Remove the foil and bake uncovered for 15 minutes or until the cheese is melted.

Great recipe. Works well with chicken, as well. Make sure and use medium sized tortillas and not the smaller 6” ones.
