Nachos are a simple yet enjoyable dish to make and eat! We always cook an extra chicken breast with the intention of making Chicken Nachos the next day. Additionally, we prepare our tortilla chips at home, which add a delicious corn flavor to the baked chips. Plus, it's a delicious, low-calorie dish!
Leftover Chicken is awesome for so many reasons.
Leftover chicken is a versatile ingredient that can be used to create a variety of quick, easy, and delicious meals. For instance, if you have some pasta, you can make a tasty dinner using some frozen spinach, a lemon, and leftover chicken. Tortilla chicken soup is another great way to use leftover chicken, and it takes just 15 minutes to make. Alternatively, you could try chicken with crusty bread, which is another lunchtime favorite that takes just 15 minutes to prepare. In the summer, a chicken breast sandwich with fresh sliced tomatoes makes for a great meal, or even a chicken salad sandwich.
Martini night fun with Nachos!!!
On Friday nights, we enjoy having a Martini for dinner, but we need to be careful not to overeat so we can enjoy that Martini and not go over too much on the calories for the day. Chicken is a great choice as it's light and filling. I could pass on dinner, but that would mean the Martini is going to knock me out early!!! Nachos are also a fun and easy option for a relaxing night in.

To make your own corn chips, cut up six corn tortillas into triangle shapes and bake them on a cookie sheet until golden brown and crispy. Once done, add some chopped-up chicken breast and cheese. Monterey Jack and Sharp Cheddar are our preferred cheese choices as they melt well and taste amazing.
Remember to weigh everything, including cheese and toppings, to control the amount of oil and salt used. Weighing or measuring everything can help cut down on excess calories.
TIP: For 6 corn tortillas cut into chips, we used 4 ounces of cheese and one 8-ounce chicken breast
Melt the cheese in the oven. I usually place it in a 375-degree oven, but if you trust your broiling skills, the cheese will melt nicely under the broiler.
Serve with your favorite salsa, and if you like it spicy, like us, chop up a Jalapeño or Serrano and sprinkle on top.
So yummy!!!!!
And don't forget to make some homemade guacamole.
A Tostada is just as much fun as Nachos. Plus, they are a little easier to make because you don't have to cut the tortillas to make the chips. Just make a tostada. Cook the corn tortilla and put a ¼ of a chopped-up chicken and 1 ½ ounces of cheese. Melt the cheese in the oven and enjoy. Takes about 10 minutes to make everything.
