Pizza night is always a blast! This four-cheese pizza recipe with sausage, mushrooms, and a touch of fresh sage is absolutely delicious! The NY sharp cheddar has such a delightful sweet and sharp flavor, Fontina cheese is creamy and mild with a nice savory nutty taste, Ricotta cheese has a lovely creamy texture with a subtle flavor, and of course, mozzarella cheese is creamy and, well, it’s a must-have on pizza!
Usually, we just buy pizza crust since it's so convenient, but this week, we decided to give homemade crust a try. We whipped up an amazing homemade pizza crust using "00" pizza flour. It turned out great! The crust had a nice crispy crunch, and the flavor of the crust, along with the four cheeses, was just perfect. Adding spicy Italian sausage with sage and Bella mushrooms made the flavors come alive and made my taste buds super happy. This pizza is now my absolute favorite!
Making this homemade four-cheese pizza
For us, making homemade pizza is always a fun time. What I like the best about making homemade pizza is you can add your favorite toppings and zip up the sauces with your favorite spices. Like adding more oregano or garlic. Or what we always like is a little heat, so adding habanero is always good.
When I'm making a recipe, I always like to get all the ingredients together and do any prep work first. So, for this yummy four-cheese pizza with sausage and sage, I start by taking out the cheese, sausage, mushrooms, and dough from the fridge. Then, I shred all the cheeses.
Preparing the crust for the four-cheese pizza recipe
- Before you add the toppings, bake the crust at 500 degrees for 8 minutes. This will almost completely cook the dough, and it'll finish cooking when you add the toppings.
- When you spread the pizza dough out on the sheet pan, always put a teaspoon of olive oil on the pan to prevent the dough from sticking.
- Sprinkle some red pepper flakes, parmesan cheese, and/or a teaspoon of chunky salt on the crust to really make the flavors pop.
- Roll out the crust onto the sheet pan and bake. This will help all the flavors seep into the crust.
The sauce for the pizza is olive oil and garlic.
When the crust is cooking, get the toppings ready. First, make the "sauce" for the top of the crust. Add ¼ cup of olive oil to a saute pan. Heat the oil and then add the sage leaves. They will crisp in a minute or so. Remove the sage and drain on a paper towel. Over medium heat, add garlic to the olive oil and saute for a couple of minutes. Do not burn the garlic. This olive oil is going to be the sauce for the pizza crust.
Save a tablespoon of this yummy garlic-infused oil for making the mushrooms. The rest of the olive oil will spread on the pizza crust after it has baked.
Preparing all these wonderful toppings
Slice the mushrooms. Heat the one tablespoon of the reserved garlic-infused olive oil and add the mushrooms to the pan. Saute for a couple of minutes and add one teaspoon of salt. If you really want additional flavor with the mushrooms, add one tablespoon of Sherry to the mushrooms. This gives the mushrooms a sweet flavor and really pops the mushroom flavors. Cook until the sherry has completely evaporated. Remove from heat. Set aside until ready to build the pizza.
Cook the Italian sausage in the same pan the mushrooms were cooked in. Once the sausage is completely done, remove it from the pan and set aside until ready to build the pizza. To make this four-cheese pizza really cheesy, shred the cheeses and mix them together.
Build the Four Cheese Pizza
Take the pizza crust from the oven when it's a nice light golden color. After that, spread the garlic and olive oil over the crust.
Top the pizza with the shredded cheese (NY sharp cheddar, mozzarella, and fontina). Make sure to mix them together so that every piece of this delicious four-cheese pizza has all the flavors! Top with the cooked mushrooms and cooked sausage, and then top with spoonfuls of the ricotta cheese.
Place the pizza in the oven and bake for 10 minutes at 500 degrees. Before removing it from the oven, make sure the cheese is melted and has a nice golden color. Top the pizza with the sage leaves.

Ingredients
Dough and Sauce
- 1 Pizza Dough
- ¼ Cup Olive Oil
- 2 Tablespoons Garlic
- 1 Tablespoon Crushed Red Pepper Optional
- 1 teaspoon Salt
Cheeses
- 6 Ounces White Sharp Cheddar Cheese
- 6 Ounces Mozzarella Cheese
- 6 Ounces Fontina Cheese
- 6 Ounces Ricotta Cheese
Additional Toppings
- 12 Ounces Spicy Italian Sausage
- 8 Ounces Mushrooms
- ¼ Cup Sage Leaves
Instructions
- Preheat oven to 500 degrees (or temp on pizza crust package). Pre-bake Pizza crust. We bake ours for about 8 minutes.
- Heat the olive oil in a saute pan. Add the sage leaves. Saute them for about 2 minutes until they start to crisp up.
- Drain the sage leaves on a paper towel. Set aside until you build the pizza.
- Add the garlic to the olive and saute for about 2 minutes. Do not burn the garlic. Remove the olive oil from the heat. Set Aside. Reserve 1 Tablespoon of the olive oil with garlic to use for sauteing the mushrooms.
- Slice the mushrooms
- Saute the mushrooms in the 1 Tablespoon of the reserved garlic olive oil. Add one teaspoon of salt. Cook the mushrooms until they have the crispness you prefer—about 5 minutes. Remove from the pan and set aside until you build the pizza.
- Cook the sausage until it's done in the same pan as the mushrooms.
- Shred the cheese- NY Sharp white cheddar, Mozzarella, and Fontina.
Build the pizza
- When the dough begins to brown, remove it from the oven and build the pizza.
- Using a pastry brush, spread the olive oil and garlic mixture onto the pizza crust.
- Mix the cheeses together and sprinkle on top of the pizza crust.
- Add the sauteed mushrooms
- Sprinkle on the cooked sausage
- Spoon dollops of the ricotta cheese on top.
Final Steps
- Bake at 500 degrees for 10 minutes and check. Keep checking every few minutes until the cheese is bubbling and starts to get a nice light golden shade.
- When the pizza is done, remove from the oven and top with the sage leaves.
- Cut and Enjoy!!!!
