So much fun to make this Bunny Cake
So that everyone knows, I am not a creative person when it comes to baking! When I think of creative bakers, I think of those amazingly difficult cakes or pies. I am really good at figuring out how things are put together, like Ikea furniture (I humbly consider this a personal talent of mine). But NO ONE (especially Amy) wants me to help paint a room or help hang wallpaper.

Ask Amy I get more paint on my clothes, her hair, and any dog nearby!! Now my daughter can look at a room and come up with the perfect paint color, curtains, and furniture arrangements. And she can paint a room like a Pro. So, for us, cake decorating isn't exactly like putting together Ikea furniture or designing a room. So we are both super proud of this cute little bunny cake.

Great to get the kids involved
I have been making this cake since I was a kid, and it still makes me laugh. When the kids were little we would have so many giggles making this bunny cake. They had so much fun helping to cut out the ears and bowtie. Then, they would get very hyped-up on sugar from the coconut, licorice, and jelly beans. They would be pinging off the walls from building the cake. Good times!!!
No Kids around, but I still want to make the Bunny Cake
Ok, what is a person to do when they are on a diet and there aren't any little kids in the house? Wait, we have 4 big dogs. I know Elvis loves Bunnies since he almost caught one a few weeks ago. So we did pull out our creativity and made this cake for these 4 dogs we love so much. The cake looks the same but it is a dog-friendly cake. For example, we used a yellow cake mix and then added applesauce instead of oil, peanut butter (just because Frank is crazy about peanut butter), and eggs.
Then for the frosting, we got super creative. Well, I think it was creative. We creamed two bananas and milk. flour and a little bit of Philadelphia Cream cheese. OMG, The boys loved this. So we can save some money this week on Frosty Paws and Pup-Peronis! Well, Elvis the real bunny lover doesn't care for the cake (he prefers the real thing). He is so strange and doesn't eat anything unless he has time to think about it and does a small taste first. We think he wants a food tester!!!
For dog lovers don't worry no one gets the jelly beans or licorice. And we removed some of the coconut flakes from the cake.

Start a tradition with your kids and make this cake it is fun and oh-so-easy. All you need is your favorite cake recipe (ours is boxed!), and white Frosting. 4 or 5 cups of coconut, green and red food coloring, jelly beans, and red licorice.
Just bake a two-layer round cake. Let it cool. Cut the ears of one of the rounds. Cut the opposite edges of the cake to make the "ears" the remaining cake is the "bowtie".
For the "grass" add several drops of green to the coconut. Add 7 or 8 drops to 2 cups of coconut and mix in well. Continue to do that until you get the color you want.
For the pink in the bunny ears take ¼ cup coconut and add 2 drops of red food color.
Have fun making this cake. . .we did and will again next year. Even if Elvis isn't a fan!
