We absolutely love having a meatless day every week! It's such a fun way to try out new vegetarian spins on meals. Today, we were both in the mood for a delicious, crave-able cheese pizza.
Mushroom Four Cheese Pizza
One of our favorite things to do is to search through the pantry and fridge for interesting ingredients to make into fun recipes. Luckily, we found some Portobello mushrooms and plenty of yummy cheese in there! The only thing missing was the crust. Unfortunately, we had to make a trip to the grocery store, and if you've read our other posts, you know how much of an adventure that is for us. But we didn't let that stop us from making a scrumptious mushroom four-cheese pizza that was loaded with ooey-gooey cheese and yummy mushrooms.
I made my way to our new grocery store and was so impressed - they had everything I needed and more! I was so happy when I found some incredible pizza dough, awesome Shiitake Mushrooms, and even some non-fat feta cheese. You might think it's odd to choose non-fat cheese for a pizza, but I promise it's just as tasty as the full-fat version. I actually love the flavor and texture of the non-fat feta, and why not cut the calories anywhere possible!!!!
Actually, a Five Cheese Pizza. . . Bonus
We wanted our mushroom cheese pizza to be extra special, so we selected four different cheeses that melted like a dream and added heaps of creamy ricotta cheese to each slice.
With its perfect blend of flavors, every bite of this pizza is a delicious experience. The cheese flavors are perfectly balanced, and the sautéed mushrooms add a delightful savoriness. For meat lovers, the Shiitake mushrooms provide the same texture as meat, with an earthy and satisfying flavor. And be sure to pair it with a good glass of red wine to complete the experience!

- You don't need a lot of olive oil to sauté mushrooms.
- Use non-fat or low-fat cheese when possible.
- I just learned the coolest trick for slicing mushrooms. Instead of using a knife, grab an egg slicer! It's seriously amazing how perfectly and uniformly the slices turn out, and it's super speedy, too. Plus, when you have uniform slices, they cook up evenly, too! The Ultimate Cheese Pizza Recipe for Meatless Mondays
A Few Things We Use
Ingredients
Pizza Crust
- 1 Pizza Dough
- ½ Tablespoon Olive Oil
- 2 Teaspoons Crushed Peppers Optional
Pizza
- 1 Tablespoon Olive Oil
- 1 Shallot
- 3 Cloves Garlic
- 8 Ounces Shiitake Mushrooms
- 8 Ounces Baby Bello Mushrooms
- 1 teaspoon Salt
- ¼ Cup Non Fat Ricotta Cheese
- 1 ½ Ounces Sharp Cheddar Grated
- 2 Ounces Parmesan and/or Asiago Cheese Grated
- 3 Ounces Mozzarella Cheese Grated
- 2 Ounces Fat-Free Feta Cheese
- 5 or 6 Basil Leaves Optional
Instructions
- Preheat the oven to 450 degrees or to the temperature listed on the pizza dough package. Put ½ tablespoon of olive oil on a pizza stone or baking sheet and sprinkle crushed red peppers on top.
- Spread the pizza dough onto the baking sheet or pizza stone and bake it for about 10 minutes, or until it is cooked through, according to the package instructions.
- Slice Mushrooms (Use an egg slicer to get all the mushroom slices the same size)
- Chop garlic and shallots.
- Place 1 Tablespoon of olive oil in a sauté pan and heat. Add chopped garlic and shallots. Cook until they start to soften.
- Add sliced mushrooms (both the Portobello and Shiitake)
- Continue cooking the mushrooms and garlic until the mushrooms are softened to your desired texture. Add 1 teaspoon of salt, or to taste.
- Spread the mushroom mixture on top of the cooked pizza crust.
- Use a spoon to add dollops of the ricotta cheese over the pizza evenly.
- Mix the cheddar, parmesan/asiago, and mozzarella cheeses. Sprinkle over pizza.
- Sprinkle on the feta cheese.
- Bake the pizza in the oven for 20 minutes, checking periodically until it is golden on top.
- Slice the basil and sprinkle on top of the pizza.
- Slice and enjoy with a good glass of wine
