Making the Chicken Parmesan Sandwich recipe
This chicken parmesan sandwich dinner is really quick to make. The most challenging part is mixing the panko ingredients and beating the egg. We prefer to use small chicken breasts or chicken tenders, but if you only have a large chicken breast, there are two ways to prepare the chicken.
- Cut the chicken breast down the middle, cutting through the thick part of the chicken so it's about ½ inch thick.
- The easiest way to prepare the chicken is to wrap it in saran wrap and beat it with a meat tenderizer until it's about a ½ inch thick. Now this is a major stress reliever because you can take out all those issues that happened during the day. haha
I always like to get all the ingredients out of the pantry before starting to cook. Its another way to cut out the stress when making dinner. I mean making dinner should be a fun time. Get everyone involved. Plus, pour yourself a glass of wine and forget about the day.
In a shallow dish mix together the panko mixture (Panko, Parmesan cheese, oregano, garlic powder, and salt). Beat the egg in a dish large enough to dip the chicken breast in.
Preparing the chicken for the air fryer or oven
Lightly coat the chicken with cornstarch. This step helps to create a crispy outer layer on the chicken.
After coating the chicken with cornstarch, dip it in the egg and then coat it with the panko mixture.
Once the chicken breasts are coated with the panko mixture, they're good to go for cooking. We personally like using the air fryer because it's quicker, but the oven works great, too. Lightly spray the chicken with cooking spray. I like to use olive oil or butter spray.
Air fry the chicken for 9 minutes at 400 degrees, or pop it in the oven for 15 to 20 minutes. Flip the chicken and cook for 3 to 5 minutes in the air fryer and 5 to 8 minutes in a conventional oven. Just be sure to cook the chicken until it reaches 165 degrees internally.
Once the chicken is cooked, go ahead and spread about ¼ cup of marinara sauce on top of each chicken breast. Then, sprinkle ½ ounce of mozzarella cheese on each chicken breast. Pop them in the air fryer or bake them until the cheese is all nicely melted.

Chicken Parmesan Sandwich
Ingredients
- 1 Pound Chicken Breast
- 1 Egg
- ¾ Cup Panko
- ½ Cup Grated Parmesan Cheese
- 1 teaspoon Oregano
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 2 Tablespoon Corn Starch
- 2 Ounces Low fat mozzarella Cheese
- 1 Cup Marinara Sauce
- Cooking Spray
- 2 Hoagie Buns
Instructions
- Mix together in a shallow bowl - Panko, Parmesan Cheese, Oregano, Garlic, and Salt. Beat one egg in a shallow bowl.
- Cut Chicken Breast in half or wrap the chicken in saran wrap and beat it until it is about ½ thick. I like to use chicken tenders. Sprinkle cornstarch on the Chicken Breast.
- Dip the chicken breast in the egg.
- Roll Chicken into the Panko mixture
- Place Chicken breast into air fryer basket. Spray the breaded chicken lightly with olive oil Spray. Cook for 9 minutes in an Air Fryer at 400 degrees or 15 minutes in a 400-degree oven.
- Flip the Chicken over. Spray with cooking spray. Cook for 3 to 4 more minutes in the air fryer and 5 minutes in the oven. Make Sure the chicken reaches 165 degrees.
- Put ¼ cup of marinara sauce (or more if you like a lot of sauce) on each chicken breast.
- Place ½ Ounce of cheese on each Chicken Breast. Melt Cheese in Airfry at 400° for 3 minutes to melt the cheese.
- Remove the Chicken from the Air Fryer and place it on the buns.
- Serve with your favorite wine and Enjoy!!!!
