Leftover Chicken
Leftover chicken is an excellent way to make a quick and easy dinner with minimal effort. We absolutely adore roasting, grilling, baking, stir-frying, and making satay chicken. One of the main reasons is that we can use the leftovers to make easy and delicious meals during the week. Buying a rotisserie chicken from the grocery store is even easier than roasting a chicken at home, but it is more expensive!
We usually roast a large chicken so that we have enough leftover chicken for the entire week. Having chicken as a go-to protein source makes it easier to stick to our diet plan. Additionally, the variety of herbs and spices that can be added to chicken makes for some really amazing meals.
Chicken when I grew up
I grew up on a dairy farm surrounded by cows, chickens, pigs, and lots of Draft Horses and sulky horses. My dad was a horse trader, but that's a story for another day. Growing up, there was always something fun to do. However, the day we were going to have chicken was never my favorite. We didn't name our chickens if you know what I mean! I have some very strange memories of when my Mom would butcher the chickens, but I won't go into that experience - I’m saving that for my therapist! Haha. Just kidding, I had a great life growing up. Just chicken day wasn’t cool!!!
Let’s just say If I had to "get" chicken the way my Mom did, we would be eating a lot more pork and steaks. I remember thinking how cool it was to have fried chicken or roasted chicken for dinner. And then there were those really cool times when we purchased fried chicken from the local chicken place. We didn’t have a KFC in our area! We never had any leftover chicken because it was always so delicious and we were always so hungry at dinnertime!
Roast Chicken Day!
Amy and I love making roasted chicken on weekends it only takes a couple of hours to bake, and it's effortless to make. There are numerous ways to make roast chicken. You can stuff the chicken with sliced lemon and rosemary, make a glaze, cover it with orange juice and oranges, and so on. However, I prefer seasoning it with just salt, pepper, or Adbo Seasoning with some cayenne pepper for a spicy chicken.
After seasoning the chicken, put it in the oven and bake for a couple of hours. Then open a bottle of wine, turn on some music, or the TV, and wait for the chicken to finish. We love "Roast Chicken Day" for its Easy Juicy Roasted Chicken. Not only do you get a great Roast Chicken dinner, the house smells great, and you also get to enjoy the leftover chicken and all the fun dishes that come with it.
We also love grilling. When grilling chicken breasts, we always grill at least two additional chicken breasts so that we can have leftovers.
