It has been a while since we last had a loaded baked potato. We haven't really thought about it, although we've tried other potato dishes like potato skins, just a baked potato, mashed potatoes, spring potatoes with chives, and baked french fries. Unfortunately, both of us caught a nasty cold and didn't feel like cooking anymore. Amy, in particular, has really been down and out. First, she had a stomach virus, and now she has brought this nasty cold into our house. We are now at the point of playing the blame game of who got who sick.
Anyway, last night, Amy said she wanted a baked potato. Initially, I wanted a bowl of soup, but that would mean going to the grocery store. So, I thought a baked potato was simple and easy to make. She has not been feeling well, so I wanted to make her something that would make her happy.
Loaded Baked Potato
Steps for the Perfect Loaded Potato.
- Wash the Potato
- Cut out any bad spots
- Prick the Potatoes with a Fork
- Rub the potato with your favorite oil. (We used Olive Oil. I don't think Coconut oil will be good!). Sprinkle with a coarse salt.
- Place Potato on a baking sheet in a 375-degree oven.
- Bake for one hour (60 minutes)
- Check for doneness by piercing the potato with a fork. The skin should feel crisp, and the inside will feel soft
- If they are not done, flip over and bake for another 15 to 20 minutes.
- When done. Cut Potato Open
- Fluff Potato with Fork
- Add your favorite toppings.
- Serve and Enjoy!!!!
Potential Toppings
We made a loaded potato using salt, pepper, lite sour cream, onion, bacon bits, and Thai peppers, and it turned out to be a delicious comfort food. The Thai peppers gave it a spicy kick! As it turned out, we were still within our calorie limit, so we were able to add extra bacon bits to the potato.
I know cheddar cheese, parmesan cheese, butter, ham, broccoli, pancetta, caramelized onions, chives, green onions, and jalapeños are other goodies that can be added to a baked potato.
