We love having Mexican food at least once a week. This has been a key factor in our successful weight loss journey. We've taken many delicious Mexican recipes and reimagined them to reduce the calorie count while keeping the fantastic flavors intact. We will be sharing all of our favorite recipes on the blog. Hopefully, you enjoy these dishes as much as we do. This grilled shrimp taco recipe is one of our favorites.
Amy used to make amazing fried fish, fried pickles, and onion rings that we still crave. We plan to make them this winter for a special occasion. One of the best things about our lifestyle change is that we can still enjoy all the foods we love, just not as often or in large quantities as we used to. However, we never compromise on flavor. One of our favorite summer dishes was fried fish tacos, which we reimagined into a blackened fish taco (see recipe). We also love tacos in general and wanted to create another recipe using shrimp. So, we came up with this recipe for Shrimp Tacos. We even figured out how to make homemade corn tortillas to cut additional calories.
Himalayan Salt Block for grilling shrimp
You'll see in some of our pictures we enjoy grilling using a salt block. We were at a Williams Sonoma outlet and found a Himalayan Salt Block. It was on sale, so we figured it was worth a shot. This is the coolest addition to our grilling tools since buying the actual grill.
The next day, we decided to make grilled Shrimp Tacos. I couldn't get enough of them, and since there were very few calories, we could eat several tacos. The fresh flavor and cooking them on the Himalayan Salt Block was so much fun. The salt infuses from the salt block, and it's so subtle it just enhances the shrimp. My mouth is watering as I write this!!! Guess what we're having for dinner tonight.
The grilled Shrimp Taco recipe is so good and easy you will want to have it at least once a week.
The shrimp tacos are low in calories, so we were able to enjoy a Margarita with dinner. No guilt here!
To accompany this dish, we prepare an easy and delicious guacamole, which we consider the best ever. However, if you don't have the time to make it (it takes about 10 minutes!), sliced avocado or tomatoes are also great alternatives.
We also made homemade tortillas to go with the shrimp tacos. Prepare to be amazed by the taste of these homemade tortillas! They are soft, tender, and infused with a subtle aroma that will make your mouth water. You don't need to be a culinary expert to make them, as they are super easy to prepare and take only a few minutes to cook. Once you try these homemade tortillas, you'll never want to go back to store-bought ones again.
Don't forget to heat the tortillas before serving. You don't need to heat them for too long as they can become dry. To warm them up, you can wrap them in foil and place them on the grill, away from the hottest part of the grill, and just let them warm through.
This dish is versatile and can be served as a main course or an appetizer. It's so delicious that everyone will think it took hours to make, but it's actually very simple. All you need to do is add some shredded radishes and cilantro. If you prefer a spicier flavor, you can add some sliced jalapeños or serve them on the side.
Party Tip for Shrimp Tacos
Are you planning a party, but unsure about what to serve? Here's a unique and exciting idea that will make your guests happy. Create a Taco station by putting out dishes filled with delicious ingredients like Shrimp, Corn or Flour Tortillas, Shredded Radishes, sliced Avocado, Guacamole, sliced Jalapeños, chopped Tomatoes, Cilantro and quartered Limes. Your guests will have a great time building their own custom Tacos, and it'll be an unforgettable experience for everyone.
NOTE: Do not leave Shrimp in the marinade for more than 15 minutes. The lime and tequila will start to cook the Shrimp.

Grilled Shrimp Tacos: A Taste of Tangy Lime and Tequila
Ingredients
Shrimp
- 2 pounds Shrimp
- 1 teaspoon Cumin
- 1 ½ Limes Should be about 2 ounces
- 2 Ounces Tequila
- ½ Cup Radish About 6 Radishes
- ½ Cup Cilantro
- 12 Corn Tortillas Extra Thin Tortillas or flour tortillas
Sour Cream Sauce - OPTIONAL
- 4 Tablespoon Fat-Free Sour Cream
- 1 Teaspoon Cayenne Pepper
- Hot Sauce Few Dashes
- ½ Teaspoon Garlic Powder
- Pinch Salt
- ½ Teaspoon Cumin
- ½ Teaspoon Lime juice
Instructions
Shrimp
- Peel and clean Shrimp. See our tip on cleaning Shrimp.
- Toss shrimp in cumin
- Mix together the marinade: In a bowl combine ½ cup cilantro, juice from 1 ½ limes (about 2 ounces), 2 ounces Tequila
- Pour Marinade over the Shrimp. We have found 10 minutes in the refrigerator is long enough to marinate the Shrimp. It will start to cook if you leave it on for more than 15 minutes.
- Shred RadishesCoarsely chop ½ cup cilantro
- Grill shrimp until opaque and a little “white” in color and completely cooked through
Sour Cream Sauce
- Mix together sour cream, 1 teaspoon cayenne, a few dashes of hot sauce, ½ teaspoon garlic powder, a pinch of salt, ½ teaspoon cumin, ½ teaspoon lime juice
Serve Tacos
- Everyone can pick their favorite toppings
- Don't Forget the Margarita!!!
