While preparing this dish, we found out that dogs also enjoy pineapple! When a piece accidentally fell on the floor, Kevin quickly snatched it before I could pick it up. Teddy then started begging for some too. We did some research and asked Alexa if dogs can eat pineapple, and it turns out that it's perfectly safe. Of course, we always double-check with our Vet to ensure the safety of our two boys. It's always amusing to see our vet's reaction when we ask if our overweight dogs can eat something low in calories. Our boys love fruits and vegetables such as bananas, apples, sugar snap peas, green beans, carrots, and Teddy's personal favorite, cucumbers.
Our other two boys, Roscoe and Elvis, give us a perplexed look when we offer them these "treats." They're quite particular about what they eat, and it's a challenge to get Elvis to eat his dog food, even when we mix in chicken pieces. Mealtimes are a struggle in our household, but that's a story for another day.
Making spicy teriyaki salmon and pineapple
This is a quick and easy recipe. We used pineapple in juice, but you can also use pineapple with syrup. Both taste great, although the latter adds about 50 more calories. We're already thinking of making this dish with fresh pineapple on the grill during the summer.
To start, cut the salmon into bite-sized chunks that are similar in size to the pineapple pieces. Then, season the salmon with cornstarch, cumin, garlic, turmeric, and salt.
For a perfectly cooked salmon in an air fryer, start by applying a layer of cooking spray, preferably Olive Oil spray, to the basket. Next, add the salmon coated in spices and give it a light spray of cooking spray.
When cooking salmon in an air fryer, simply set the temperature to 375 degrees and fry for 8 minutes. Be aware that cooking times may vary depending on the air fryer, so it's wise to periodically check on the salmon to ensure it's cooked to perfection.
When air frying the salmon, you can simultaneously pan-sear the pineapple using a couple of tablespoons of olive oil. Cooking the pineapple should take around 2 minutes per side.
Once you have achieved a beautiful light golden color on both sides of the pineapple slices, set them aside with care. Next, add ginger, garlic, and habanero (if desired) to the sauté pan and cook them for 30 seconds. Then, add the pineapple chunks along with the juice, teriyaki sauce, and honey, and cook them for 3 to 4 minutes until the sauce starts to reduce. To thicken the sauce, create a cornstarch slurry by mixing cornstarch and water together, then add it to the sauce. Once the sauce has thickened (approximately 30 seconds), confidently coat the salmon with the sauce by tossing it in.
Savor the delicious teriyaki salmon with a hint of spice, served with pineapple slices and rice on the side.
Spicy Teriyaki Salmon and Pineapple
Ingredients
- 1 ½ Pounds Salmon
- 2 Tablespoons Cornstarch
- 1 teaspoon Cumin
- 1 teaspoon Garlic powder
- 1 teaspoon Turmeric
- 1 teaspoon Salt
- 1 Can Pineapple rings in juice Reserve the juice
- 1 ½ Cups Pineapple juice Juice from the pineapple rings and/or pineapple chunks can
- ½ Can Pineapple chunks
- 1 Tablespoon Olive Oil
- 1 Tablespoon Ginger
- 2 Tablespoons Habanero Optional
- 2 Cloves Garlic
- ⅓ Cup Teriyaki sauce
- 1 Tablespoon Honey
- 1 teaspoon Cornstarch
- Cooking Spray
Instructions
- Cut the salmon into small, bite-sized pieces.1 ½ Pounds Salmon
- To prepare the salmon, use cumin, garlic powder, salt, and 2 tablespoons of cornstarch for seasoning.2 Tablespoons Cornstarch, 1 teaspoon Cumin, 1 teaspoon Garlic powder, 1 teaspoon Turmeric, 1 teaspoon Salt
- Before cooking your salmon in the air fryer, prepare the basket by giving it a light coat of cooking spray. Then, gently place your salmon in the air fryer and lightly mist the salmon with cooking spray. Set your air fryer to 375 degrees and let the salmon cook for 8 minutes.Cooking Spray
- While the salmon is cooking, heat up some olive oil in a sauté pan and confidently sear the pineapple rings on both sides for about 2 minutes per side.
- Once both sides of the pineapple are seared, remove it from the pan and set the pineapple aside.1 Can Pineapple rings in juice, 1 Tablespoon Olive Oil
- Place the ginger, habanero, and garlic in the sauté pan and cook for 30 seconds. The habanero is optional.2 Tablespoons Habanero, 2 Cloves Garlic, 1 Tablespoon Ginger
- Carefully mix the pineapple chunks in the sauté pan.1 ½ Cups Pineapple juice, ⅓ Cup Teriyaki sauce, 1 Tablespoon Honey
- Pour the pineapple juice that was reserved from the can of pineapple into the mixture. Also, add the teriyaki sauce and honey. Allow it to come to a boil. Cook for approximately 3-4 minutes until the sauce begins to thicken.
- To thicken the pineapple sauce, mix 1 teaspoon of cornstarch and 1 tablespoon ofl bowl until combined. Then, add it to the sauce. water in a smal1 teaspoon Cornstarch
- Now, add the cooked salmon to the pineapple sauce. Gently toss the salmon in the sauce.
- Serve the dish with rice and seared pineapple rings for a delicious meal. Enjoy!
