I enjoy every season, and I love living in a place where the weather changes. During the fall, we like to make soups and enjoy all the autumn activities. However, our favorite part is the first snowfall, as we have four big dogs who love playing in the snow. It's also beautiful when the snow sticks to the trees. But as winter progresses and the snow turns grey, and we feel trapped inside the house, it seems like it will never be warm again. Then Bam! Spring arrives, and we feel warm again! What I love about spring the most is fresh vegetables like sugar snap peas, asparagus, squash, cucumbers, and many other fun fresh veggies!!!!!
Spring is wonderful!!!!
Dogs and Sugar Snap Peas
We love being outside in the warm sun and all the fun of planting the garden. One of the first things we always get from the garden is Sugar Snap Peas, which are delicious. One of our favorite spring dishes is sugar snap peas, Asparagus, some ginger, and garlic. When we make this, we know spring has arrived.
Oliver was a remarkable member of our family. He was our big, black, and loveable lab. Like many labs, he always had a few extra pounds, but he loved Sugar Snap Peas, which was great because it was a healthy food for him. The other boys would stare at him as he enjoyed eating the peas. Elvis used to take peas and bury them in the yard as if they were precious treasures that needed to be hidden from the world! Frank and Roscoe wouldn't even bother to come over to the garden.
As an update, since this blog post was written, we have had to say goodbye to Frank and Oliver. We have added two other boys with totally different personalities to our family. Teddy, also a black lab, and Kevin, a Hound mix, are now part of the family, and the best part is that they both love Sugar Snap Peas. Teddy is such a fan of the peas that he even steals them from the garden! We know Oliver is looking down from Heaven and is proud that he has passed on the love of peas to Teddy and Kevin. Whenever we plant peas, we think of Oliver.
It's funny to see the different personalities of all these puppies, and we are so happy they are part of our lives.

Fresh Sugar Snap Peas and Asparagus Recipe
Ingredients
- 4 Cups Sugar Snap Peas
- 3 Cups Asparagus
- 1 Tablespoon Olive Oil Can add more if you want additional oil
- 1 teaspoon Sea Salt
- 1 Tablespoon Ginger Can add more if you are like me and love Ginger
- 1 Tablespoon Roasted Garlic Or two Cloves Garlic
Instructions
- Rinse the Sugar Snaps with cold water. Snap the ends off the Sugar Snaps (This is a preference, not necessary)
- Rinse the asparagus thoroughly. Then, snap off the bottoms of the asparagus. This is a simple process - take a few asparagus and gently bend them. The asparagus will snap at the hard part of the stem. Next, cut the asparagus to about the same length as the sugar snaps, which is around one-third of their length, depending on the length of the asparagus.
- To prepare the Sugar Snap peas, grate 1 tablespoon of ginger (or slice it if you prefer) and add 1 tablespoon of roasted garlic (or 2 cloves of sliced/grated garlic). Bring a pan of water to a boil. Then add 1 teaspoon of salt and the Sugar Snap peas to the boiling water and cook for 3 minutes. Drain the Sugar Snap peas
- Add 1 tablespoon of olive oil to a sauté pan and heat it. Add ginger and garlic to the sauté pan with the olive oil.
- To prepare the dish, add asparagus and ¼ cup of water to the sauté pan along with ginger and garlic. Cook for 30 seconds. This addition of water helps prevent the ginger and garlic from sticking to the pan. You could also add olive oil, but this will increase the calorie count. However, this dish doesn't need any additional oil. It tastes perfect without the extra oil. Let the veggies be the star, not the oil!!!
- Add the Sugar Snaps to the Asparagus. Toss and cook for a couple of minutes to coat the sugar snaps and asparagus in the garlic and ginger. Taste and add additional salt if needed.
- ENJOY!!!!
