We absolutely love grilling, and this year we've discovered a new obsession - grilling using a salt block. We use a Himalayan salt block and have found that grilling Shrimp and Asparagus together makes an incredible dinner. We cook the Shrimp on the Salt Block and the Asparagus directly on the grill. However, if you don't have a Salt Block, you can still use the same recipe to cook the Shrimp on the Grill. It's safe to say that one of the best summer dishes is grilled shrimp and asparagus!

The trick to grilling with a Salt Block
When grilling with a salt block, the trick is to place the block on the grill just as you start the charcoal. If you're using a gas grill, place it before lighting it. This means that the salt block needs to heat up with the grill. If you put it on a hot grill, it will crack like ours did. We learned this lesson the hard way. We didn't know how to use a salt block when we bought it. We got it on sale, and we thought, why not give it a try? It turned out to be a great bet. Unlike the time Amy decided to paint one of our rooms with high-gloss dark purple paint, which was also on sale! To this day, we still use the salt block with a crack down the middle. However, we will probably buy two or three smaller salt blocks someday.
If you're thinking of buying a salt block or already have one, we highly recommend purchasing a "scrubber" for cleaning it. We bought one, and it has been amazing for cleaning the block. And we highly recommend never painting a room in high-gloss dark purple!!!
Grilling the Shrimp

Looking for a way to add more flavor to your easy-peel shrimp? Look no further than marinating them in fat-free Italian salad dressing for 30 minutes to an hour. You can also use regular Italian salad dressing if you prefer. By choosing a fat-free dressing, not only can you enhance the taste of the shrimp, but you can also cut calories without sacrificing flavor.
The zippy seasoning from the salad dressing brings out the natural flavors of the shrimp and adds a tangy taste that will leave your taste buds begging for more. This simple marinade is one of the nicest and most effortless ways to prepare shrimp. Give it a try and see how it can elevate your shrimp dishes to the next level.
If you don't have a Salt Block, a grill basket works just as well. Cook the shrimp on the grill for 10 to 15 minutes, and you'll get a nice smoky flavor. However, we highly recommend using a Salt Block as the flavor of the shrimp is amazing when cooked this way. Before we purchased our Salt Block, we always used a grill basket and the Italian dressing was still very delicious.
Grilling Asparagus
Asparagus with Shrimp is one of our favorite meals. It's easy to cook and tastes amazing. The dish is so good that you feel like you're cheating on your diet. We usually make it once a week during summer.
The recipe is simple. Take a large bunch of asparagus, spray some olive oil on it, and sprinkle about a teaspoon of coarse sea salt over it. Put the asparagus on a hot grill and cook for about 5 minutes or until it's cooked to your liking. Once the asparagus is off the grill, sprinkle 1 and ½ ounces of goat cheese on it.
If you're watching your calorie intake, you can leave the goat cheese out. The asparagus tastes delicious even without it.

While the shrimp cooks, place the asparagus on the grill. Depending on the size of the asparagus, it should take around 5 minutes to cook on a hot grill. We prefer our asparagus with a bit of crunch, giving it a delightful texture.
As soon as the asparagus is off the grill, sprinkle goat cheese generously on top. The cheese will melt and become creamy, creating a mouth-watering flavor that will leave you wanting more. We used 1 ½ ounces of cheese for a large bunch of asparagus, but feel free to add more or less to your liking.
The most important step is to pour yourself a glass of wine and enjoy the grilled shrimp and asparagus. So yummy!!!!
