Curry Chicken and Broccoli: A Spicy Comfort Dish

How about some Spicy Curry Chicken and Broccoli served with Basmati Rice? It's a delicious dish that's perfect for any day, but it's especially comforting on a cold and rainy one. The chicken is so tender and flavorful, and we've made it spicy to give it an extra kick. The blend of spices in this curry chicken recipe are like a burst of sunshine on your taste buds, and it's sure to put a smile on your face, no matter what the weather is like outside!

Spicy Curry Chicken and Broccoli

A Spicy Curry Chicken Recipe will make you happy even on a rainy day!!!

We decided we wanted a curry "something", and we really didn't want to go to the store.  So we checked the freezer and found chicken and we lucked out that we had broccoli, cilantro, habanero, and yogurt in the fridge. I proceeded to cut the chicken, we started the rice and chopped the peppers and cilantro.  Basic prep stuff.  Then... bummer, we discovered no Curry in the cabinet!!!!!!!!!  Of course, we didn't have curry!

A special trip to the Grocery Store

At this point, I'm so hungry for Spicy Curry Chicken AND nothing else will do.  So, off we go to the store.  Okay, let me fill you in on why we don't like the grocery store.  This isn't an easy trip!  Of course, 3 of the dogs have to go with us.  Oliver is 146 lbs and has to be lifted into the car.  He refuses to jump, and Amy is an enabler of his laziness!

Elvis loves to Drive!

Elvis will destroy the house if he stays home alone.  The dog has debilitating separation anxiety, and there are no cages that will hold him.  He is a fiery little man and weighs 75 pounds, which is the smallest of all four boys.  Elvis is the one sitting up in the car, probably, in his head, telling us which direction to go.  Yes, he likes to sit like a person.  Trust me, don't get fooled by his sweet face; he goes bonkers when he is alone for more than a couple of minutes!!!

Finally, Roscoe INSISTS on having the sunroof open so he can stick his head out... Sometimes it's snowing, but we refused to open it today because it was raining so hard. 

So, 45 minutes later, we are back home with our bottle of "Curry".

The Spicy Curry Chicken and Broccoli Recipe is so easy to make

We had a blast making this Curry Chicken recipe. The hardest part of the recipe is our trip to the grocery store! After gathering yogurt, chicken broth, and a bunch of spices, we chopped up chicken, onions, ginger, broccoli, habanero, and garlic. Once we had everything prepped, the rest of the recipe was a breeze and only took 15 minutes to cook.

How to make Spicy Curry Chicken and Broccoli

To begin, prepare all the veggies and spices. Then heat up a pan and add onions, ginger, garlic, spices, and chicken. Sauté everything together until the chicken is cooked through and the onions are translucent.

When the chicken is done, add the broccoli, chicken broth, and lemon juice.  Cook for a couple of minutes.

Now, it's time to add a creamy and tangy touch with some yogurt. However, it's important to avoid curdling the yogurt by tempering it first. You can do this by gradually introducing some of the hot liquid from your dish to the yogurt until they are similar in temperature. Once tempered, stir the yogurt into your dish until it's evenly incorporated.

Serve over rice and top with fresh lemon juice, Serranos, and cilantro.

I recommend serving this with Basmati Rice.  The flavors are amazing together. It is also great with cauliflower rice, which will really save calories.

Ingredients

  • 1 ½ Tablespoons Olive Oil
  • 1 Medium Onion
  • 3 Cloves Garlic
  • 2 Tablespoons Ginger
  • 1 Habanero Pepper Optional
  • 3 Tablespoons Curry Powder
  • 2 teaspoons Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Sea Salt
  • 1 ½ Pounds Chicken Breast
  • 1 ½ Cups Chicken Broth
  • 1 Juice of Lemon
  • ½ Zest of Lemon
  • 2 Cups Broccoli
  • 1 Cup Yogurt

Instructions

  • Chop the onion, garlic, ginger, and habanero (optional).
    1 Medium Onion, 3 Cloves Garlic, 2 Tablespoons Ginger

  • Cut the chicken breast into bite-size pieces.
    1 ½ Pounds Chicken Breast

  • Heat the olive oil in a saute pan. Add the chopped onion, garlic, and ginger.

  • Sauté onions, garlic, and ginger until onion is soft. Mix in the Habanero pepper. (Habanero is optional)
    1 Habanero Pepper

  • Add the spices (curry, cumin, turmeric, and salt). Cook for a couple of minutes.
    3 Tablespoons Curry Powder, 2 teaspoons Cumin, 1 teaspoon Turmeric, 1 teaspoon Sea Salt

  • Add the chicken breast and cook over medium heat for about 10 minutes, or until the chicken is fully cooked.
    1 ½ Pounds Chicken Breast

  • Add the chicken broth, broccoli, and the juice of one lemon.
    1 ½ Cups Chicken Broth, 1 Juice of Lemon, 2 Cups Broccoli

  • Bring the liquid to a boil. Stirring frequently, cook down the broth to about half. Stir in the zest of half a lemon. Take the pan off the heat.
    ½ Zest of Lemon

  • Temper the yogurt. Start by placing the yogurt in a bowl. Next, take a spoonful of the hot liquid from the pan and add it to the yogurt. Stir the mixture well, making sure that the yogurt is completely incorporated. Repeat this process, adding another spoonful of hot liquid, and stir until the yogurt is warmed and has an even consistency. Gradually adding hot liquid to the yogurt will help prevent it from separating when added to the hot liquid in the pan.
    1 Cup Yogurt

  • Gently pour the yogurt mixture that has been tempered into the pan with the chicken and broccoli.
