Our new favorite summer salad - Tortellini and Cucumber Salad with Dill Dressing. It's funny how it came together. Amy and I were trying to decide what to make for dinner, and we originally planned to grill chicken. Since it was so hot outside, we decided against grilling. We considered using the air fryer to make fried chicken, but it wasn't quite what we were in the mood for. It would have been delicious but not exactly what we wanted.
Tortellini and Cucumber Salad
We ended up going back to our go-to grilled chicken but wanted to add some pizzazz. We thought about making a cucumber and dill dip to go with it, but that still didn't quite hit the spot. Then, Amy suggested making a tortellini pasta salad, and we knew we had found our winner. We added cucumbers, cherry tomatoes, purple onions, and the dill sauce mixture we had been discussing. 😀
Low Fat Dill Dressing
We decided to use low-fat sour cream instead of mayonnaise for the dill dressing to cut down on calories. It's astounding how much more calories a cup of mayonnaise carries - a whopping 1,495 compared to the mere 326 calories in low-fat sour cream. Non-fat plain yogurt could also be used instead of sour cream to further reduce calories. Either way, using sour cream or yogurt won't affect the taste of the dressing.
We were fortunate enough to have an abundance of dill in our herb garden and decided to incorporate it into the dressing. After some taste testing, we managed to create the perfect dill dressing. I hope you enjoy it as much as we did!

Tortellini and Cucumber Salad with Dill Dressing
A Few Things We Use
Ingredients
- 20 Ounces Cheese Tortellini
- 1 Large Cucumber
- 1 ½ Cups Cherry Tomatoes
- ½ Red Onion
- 1 Jalapeno Optional only if you want to add some spice
Dill Dressing
- 1 Cup Lite Sour Cream
- 2 Cloves Garlic
- 1 Lemon Zest and Juice
- 1 ½ Tablespoons Red Wine Vinegar
- 2 Tablespoons Fresh Dill
- 1 teaspoon Salt or more to taste
Instructions
- Boil water and cook the tortellini as per the instructions on the package. Once it's done, drain it and let it cool for around 30 minutes to an hour.
- Cut the cucumber into bite-sized pieces.
- Thinly slice the red onion.
- Cut the cherry tomatoes in Half.
- Thinly slice the jalapeño. Optional!
Dill Dressing
- Chop the Dill
- Zest the lemon, and chop the garlic
- Juice the Lemon
- Combine the sour cream, dill, lemon zest, garlic, lemon juice, and red wine vinegar in a medium-sized bowl.
- Once the tortellini is cool, add the cucumbers, red onion, tomatoes, and jalapeño (if used) to it.
- Stir in the sour cream dill sauce into the tortellini mixture, making sure it's evenly coated.
- Enjoy it as a main dish or side dish. This recipe yields 6 main-dish servings or 12 side dishes.
