Homemade Tortilla Chips - half the calories and twice the flavor!!!

I absolutely adore Doritos tortilla chips! They are a must-have whenever we go on a road trip. In my opinion, Spicy Cheese Doritos and Diet Pepsi make the perfect combination. Amy and Josh were young, they would get to choose a treat for our road trips to visit their grandma, which was a 10-hour drive. They didn't have a lot of sweets or junk food, so the road trips were a special treat for them.

Amy would get a Butterfinger bar, Ranch Doritos, and Mountain Dew.  Josh always wanted a Snickers Bar, Snickers Bar, and a Snickers Bar!  Any time Josh was having a hard time with something, like a test in school, he convinced me to let him have a Snickers Bar.  He called them his "power," and he even went as far as to say they helped him sit still and get a good grade on his test.  I know, how a Snickers Bar helps a hyperactive kid sit still- but it worked for him!!!

Ok, back to my love of Doritos

Amy and I decided to start a diet, which meant we had to give up some of our favorite snacks for a while. It was tough for us to say goodbye to Doritos and wine, but we knew it was for the best. Plus, this decision has actually made both of us feel better and inspired us to come up with a recipe for low-fat corn chips.

Homemade tortilla chips

Making homemade tortilla chips is an easy and delicious alternative to store-bought chips. They are also much healthier, containing fewer calories. All you need are two ingredients: corn tortillas and salt. You can add olive oil if you prefer, but it's not required as the salt will stick to the chips without it. Give it a try and enjoy the homemade taste!

There are flavored salts available, such as Tabasco and Bourbon salt, which add a little spice and taste great. Homemade corn tortillas are great for soft tacos, but they don't crisp up enough to make chips. Therefore, it's recommended to stick with store-bought corn tortillas for making chips.

Extra Thin Yellow Tortilla

When it comes to tortillas, the Extra Thin yellow ones are a great choice, especially if you avoid using olive oil. These thin tortillas become crispy and have a delicious corn flavor. You can skip adding salt to the tortillas if you don't like it, and they will still taste good. If you can't find Extra Thin yellow corn tortillas, you can use regular tortillas, but they will take longer in the oven and have more calories.

White Corn Tortillas are also a good option, but they are milder and don't have the same strong corn flavor. Extra Thin Tortillas seem to cook faster and can be enjoyed in larger quantities.

I know you might be wondering what we do during road trips now. Yes, we still get Doritos for long trips, but going to the grocery store doesn't count as a "road trip" anymore! We have had a lot of fun memories on those long road trips. It is still enjoyable to reminisce about our adventures, and we always love creating new memories. Of course, Doritos, Butterfingers, and Diet Pepsi are still part of our trips (in moderation, so we don't miss out on anything). And, Josh still gets a giant-sized Snickers bar for Christmas from Santa, as usual!

Fewer Calories in homemade corn chips.

Just a quick note to remember - if you want to keep your calorie intake low, consider making homemade corn chips. A serving of 24 homemade chips contains around 120 calories which is significantly lower than store-packaged chips that only give you 11 chips with about 150 calories. Not only do homemade chips help you save calories, but you also get MORE chips. It only takes 9 minutes to bake them, and the flavor of warm corn chips is simply irresistible

A Few Things We Use

Baking sheet set
Salsa and Chip Dish
Knife Set

Ingredients

  • 6 Corn Tortillas Extra Thin
  • 1 Teaspoon Salt Add more to taste.
  • Olive Oil If desired - Spray chips with olive oil

Instructions

  • Preheat your oven to 400°F. Take a stack of tortillas and cut them into triangular shapes. Cut the stack in half, then quarters, and finally into eighths. This will give you perfectly-sized chips that are ready to be baked to crispy perfection.
A piece of bread cut into slices on a cutting board
  • Use non-stick foil on the baking sheet. Place the chips in a single layer on the baking sheet and sprinkle them with salt. Bake for 5 minutes and check for crispiness. Flip them halfway through the baking process to ensure even cooking.
If the chips are not crispy enough, put them back in the oven for an additional 4 minutes. It's important to watch them because they can quickly turn brown. Additionally, every oven is different, so the cooking time may vary. Once you remove them from the oven, they will continue to crisp up a bit.
    Leftover Chicken Nachos
  • Enjoy them with your favorite salsa.
