Begin by placing flour and salt in a mixing bowl and stirring them together. Then, set this mixture aside.
In a separate bowl, combine the sugar and water and stir until the sugar is fully dissolved. Stir in the Yeast.
Next, add the yeast and sugar water to the flour/salt mixture. Mix the ingredients together using a mixer's dough hook attachment. You can also mix everything by hand on a countertop, but using a mixer makes the process much easier.
As the dough starts to come together and form a ball, sprinkle 2-3 tablespoons of flour in the bowl and continue to let the dough hook stir on the lowest setting. If the dough is sticky, add more flour, one tablespoon at a time. Knead the dough on the lowest setting for 6 to 7 minutes until it becomes firm and elastic.
Cover the dough ball in a greased bowl with a damp towel. Let it rise for 1 hour.
After the dough has risen, punch it down and let it rest for 5-10 minutes.
Cut the dough into portions.
Form each portion into a ball and poke your finger through the center to form the bagel hole.
Lightly stretch the dough around the hole until the hole is about an inch wide. Set aside.
Form the rest of the bagels. After all the bagels are formed, let them rest for 10 minutes.
Bring a large pot of water to a boil. Once the water is boiling, add the bagels, but don’t overcrowd the pot. Work in batches and let the bagels float. Boil the bagels for 1 minute, flip them in the water, and boil the other side for 1 minute.
Remove the bagels from the boiling water and place them on a parchment-lined cookie sheet. Immediately top the bagels with your favorite seasoning.
Once all the bagels are boiled and topped, bake them at 425 degrees for 25 minutes.
