I don't know about you but in our house potatoes are a veggie we have year round. We enjoy potatoes on the grill mixed with some onions, or as pub fries / French fries with Turkey Burgers, Don't forget Baked Potatoes, twice again baked potatoes, even potato skins. Also, potatoes are always great with breakfast. In our house, our favorite has to be Mashed Potatoes! If I could, I would have mashed potatoes weekly.... but oh those calories. So, we usually save mashed potatoes just for the holidays. But, on those occasions when there are leftover potatoes, now our "go-to" is Air Fryer Potato Cakes.
Air Fryer Potato Cakes
For me mashed potatoes are the ultimate comfort food. When I think of comfort food mashed potatoes are going to be the first thing to jump into my head, especially during the winter months. So, having leftover mashed potatoes doesn't happen often!!! I mean we're those crazy people that make extra potatoes on Thanksgiving so the dogs can have some during their Thanksgiving feast! But, sorry boys, that is all going to change!!!! Air Fryer Potato Cakes are so good they are fluffy with cheese and bacon bits. What more would you want??
If you have leftover mashed potatoes (which I know might not ever happen) all you have to do is add eggs, cheese, flour, garlic powder, and bacon bits. Salt and pepper might be needed, it all depends on how your mashed potatoes are seasoned. So simple to make and soooooo good. We added green onions and jalapeños. It adds a nice zip from the pepper and the onions complement the potatoes.
Don't worry if you don't have mashed potatoes these fluffy pillows of yumminess can still be made. All you need to do is make a batch of mashed potatoes. Just simmer raw potatoes until they are tender. Mix them up with a hand mixer with some milk and butter (I know so many people say you should only use a ricer. But we found a hand mixer, NOT a stand mixer, works great.) Add Butter, Cheese, eggs, flour, garlic powder, bacon bits, salt, and pepper. So in other words, if you want Air Fryer potato cakes and don't have mashed potatoes just make some but don't tell your family!!!!

This is one of the easiest recipes!! It's great and the cool part is it can be changed to your preference or to whatever you have in the Fridge/Pantry. For example, add ham instead of bacon, or don't add either. If you want a smoky flavor season with paprika. Make Garlic Mashed potatoes. We like Cheddar Cheese but a smoked Gouda would be amazing with them.
If you really want to go out on the edge add blue cheese with bacon and garlic. This would make a nice side dish with a steak. There are so many combinations for this recipe.
Just remember the items that are required for the recipe - potatoes (haha), eggs, flour, and cheese. Anything else added is up to you!!!
Air Fryer Bacon Cheddar Potato Cakes
A Few Things We Use
Ingredients
- 2 ½ Cups Mashed Potatoes
- 1 Cup Cheddar Cheese
- 2 Eggs
- ½ Cup Flour
- 1 teaspoon Garlic Powder
- ¼ Cup Bacon Bits
- 3 Spring Onions
- 1 Jalapeno Optional
Instructions
- Beat Eggs
- Mix together Mashed Potatoes, Cheddar Cheese, Eggs, Flour, Garlic Powder, Bacon Bits, ½ of the Spring Onions and Jalapeño
- Make Potato Cakes. Take about ¼ Cup of the mixture and form into a small round patty about ½ inch thick.
- Place in air fryer on top of parchment paper. We sprayed the top of the parchment paper so it was easy to flip the potato cakes. Spray the top of the potato cakes with butter spray. This helps brown the potatoes
- Bake in Air Fryer for 8 minutes at 375 degrees
- Flip and spray the potatoes with butter spray. Cook for additional 4 minutes at 375 degrees
- Enjoy!!!!
