So, I'm a bit of a leftover enthusiast - I just can't resist the deliciousness of reheated meals. But I know not everyone is a fan. Personally, I think some dishes actually taste better the next day - like pizza for breakfast, yum! However, one thing I'm not a huge fan of is leftover lettuce salad with dressing. Anyways, my family and I love to make roasted corned beef with mustard rub. And if we're lucky enough to have any leftovers, we'll whip up some hash and poached eggs for a scrumptious breakfast or brunch. It's even better with a glass of champagne or Irish coffee!

Air Fryer Corned Beef Hash
A Few Things We Use
Ingredients
- 2 Cups Shredded Potatoes We purchased frozen shredded potatoes
- 4 Ounces Corned Beef
- ½ teaspoon Onion Powder
- ½ teaspoon Garlic Powder
- ½ teaspoon Sea Salt
- ½ teaspoon Black Pepper
- 1 Egg
- Cooking Spray I like to use butter spray
Instructions
- Defrost potatoes (microwave for 30 seconds)
- Break up Corned Beef
- Slightly Beat the Egg with a fork
- Mix together Potatoes, Corned Beef, and Spices (Onion powder, Garlic Powder, Salt, Black Pepper)
- Add the Egg
- Spray Air Fryer with cooking Spray
- Mix all ingredients together and form into patties. About ½ cup per patty
- Place potato patties into the air fryerSpray the top of the potato patties with cooking spray
- Cook in Air Fryer for 7 minutes at 400°
- Flip Potato patties over and spray lightly with cooking spray
- Cook in Air Fryer for 5 minutes at 400°
- Remove from Air Fryer and ENJOY!!!
- For Additional yumminess add poached eggs to the top of potatoes. NOTE: Start to heat the water on the cooktop for the poached eggs when starting to cook the potato patties in the air fryer. This way the water will be boiling when the potatoes are done. For perfect Poached Eggs. Crack eggs in Boiling water. Cook Eggs in boiling water for 3 Minutes. Remove after cooking for 3 minutes. Eggs will be perfect EVERY TIME!!!!
