Our favorite foods are spicy with a lot of flavor. Air frying vegetables and meats is always a fun experience for us, so we decided to try air frying tofu. Since we seldom eat tofu, we were curious to know if it would be possible to air fry it. And guess what? The answer is YES! The tofu gets a nice little crunch on the outside while keeping the center creamy and flavorful. We made a Thai Red Curry sauce and tossed the tofu and potatoes in it, which hit the spot. The flavors blended perfectly, creating a unique taste profile that made our taste buds dance. Of course, we added spice with some Thai peppers, which made our taste buds REALLY dance!!!
Thai Red Curry Tofu and Potatoes
This dish can be easily prepared with chicken if you are not a fan of tofu. However, I must say that this tofu dinner recipe is one of the best I have ever tasted. It was filling, satisfying, and can be made spicier to suit your taste!
It is perfect for a meatless Monday meal. The recipe is quick to prepare and unbelievably delicious. I am not the biggest lover of Tofu and this recipe has opened a whole new world for using Tofu.
Curry is an excellent seasoning for chicken and vegetables, enhancing the taste while keeping calories low.. Spicy Curry Chicken and Broccoli, Chicken and Lentil Curry, and Spicy Shrimp Curry.
TIPS:
- To get a crispy texture on air fryer foods, use Olive Oil or Butter Spray. Just before placing the food in the air fryer, lightly spray it with olive oil or butter spray.
- It's always a good idea to measure everything to help with weight loss. This ensures you're not using too many oils or other high-calorie items.
- If you don't like spicy food, cut the peppers or pepper spice.

Air Fryer Thai Red Curry with Tofu and Potatoes
Ingredients
Final Stir Fry
- 1 Onion
- ½ Tablespoon Olive Oil
- 2 Tablespoon Lime Juice and Zest
- 1 ⅔ Cups Coconut milk
- 2 Tablespoon Red curry
- 2 Tablespoon Fish Sauce
- 1 Tablespoon Brown Sugar
- 2 Tablespoon Fresh Mint
- 2 Tablespoon Fresh Basil
- 1 Teaspoon Thai Peppers Optional
Potatoes
- 8 Ounces Small Potatoes
- 1 teaspoon Coarse Sea Salt
- 1 teaspoon Red Curry
- Olive Oil Spray
Tofu Preperation
- 14 Ounces Extra Firm Tofu
- 1 teaspoon Red Curry
Instructions
Air Fry Potatoes
- Rinse potatoes. Spray potatoes with olive oil sprayToss the potatoes with 1 teaspoon salt and 1 teaspoon red curry
- Place potatoes in the air fryer
- Air fry the potatoes for 7 Minutes at 395 degrees Stir potatoes and cook for additional 7 minutes or until they are crispy. Set potatoes aside
Air Fry Tofu
- Cut tofu into bite-size pieces
- Drain tofu
- Place tofu on a paper towel to get some of the moisture out of the Tofu
- Toss tofu in 1 or 2 teaspoons of red curry
- Cut parchment paper to fit the air fryer basket and place it in the air fryer. Place tofu into the air fryer
- Cook Tofu for 8 minutes in the 360-degree air fryer.Flip Tofu and cook Tofu for an additional 8 minutesTurn the air fryer to 390 and cook for 5 additional minutes
Making Sauce - Final Stir Fry
- Start these steps while the tofu is cooking in the air fryerChop onion, basil, and mint. Heat ½ Tablespoon olive oil into Sauté Pan. Add onion. Cook for a few minutes.
- Turn the heat down to medium-high. Add coconut milk. Bring to a Boil
- Sir in curry, fish sauce, and brown sugar
- Add the potatoes and simmer for 10 to 15 minutes
- Add the lime juice, lime zest, and Tofu.
- Mix well
- Add mint and basil. Stir together. Taste to make sure the sauce has enough seasoning.
- Serve Over Rice
