We have so much fun coming up with new low-calorie recipes that are full of flavor and, of course, lots of spice. For this weekend, we eventually decided to make Juicy Bacon Cheeseburger Meatballs. Now, coming up with that idea took some back and forth and recipe brainstorming. As usual, we had fun debating.
How we came up with making Bacon Cheeseburger Meatballs
We knew we had ground turkey to work with for our meal, so we started there. As we tossed around ideas for what to cook with turkey, our minds began to wander. Personally, I was really in the mood for a juicy Turkey Cheeseburger with lettuce and tomato, but unfortunately, there are better times of year for tomatoes. So, after lots of talking and thinking, we finally decided to try making some Bacon Cheeseburger meatballs instead.
Juicy Bacon Cheeseburger Meatballs
As I mentioned, we wanted to base this recipe on our favorite Turkey Cheeseburgers. For the burgers, we add mushrooms, for moisture, to 99% fat-free turkey. Of course, we wanted to incorporate spice..... so Jalapeño was a definite. We discussed using American Cheese, but it would be too difficult to put that in the middle of the meatball. So, we decided on Sharp Cheddar- It melts tremendously and has an excellent flavor with the turkey. Finally, we had some bacon, so, of course, we couldn't resist adding it.
Here's what we came up with
The ingredients: 99% fat-free ground turkey - you can purchase ground Turkey or a turkey breast at the grocery store. We like to purchase a turkey breast and grind the meat at home using our Kitchen Aid stand mixer similar to this one: KitchenAid® Artisan® 5 qt. Stand Mixer with the food grinder attachment.
Adding bacon, cheddar cheese, mushrooms, garlic, onion powder, and, of course - cayenne pepper and/or Jalapeño (optional) to the ground turkey gives great flavor and keeps the turkey meatballs nice and juicy.
Chop the jalapenos, bacon, and mushrooms, and cut the cheese into ¼-inch chunks.
Make the Bacon Cheeseburger Meatballs!
Mix all the ingredients together except for the cheese chunks. Form the meatballs and place the cheese chunks in the middle of the meatball. Place on a baking sheet. Cook. Then Enjoy!!!

A Few Things We Use
Ingredients
- 1 Pound 99% ground turkey
- 8 Ounces Mushrooms
- 1 teaspoon Minced garlic
- 1 teaspoon Onion Powder
- 1 teaspoon Cayenne Pepper Optional
- 1 Jalapeño Optional
- 2 Ounces Cheddar Cheese
- 4 Slices Bacon
Instructions
- Preheat oven to 400 degrees. Chop Mushrooms
- Chop bacon and Jalapeno
- Add mushrooms, bacon, jalapeño (if using), onion powder, minced garlic, and cayenne pepper to ground turkey.
- Mix together well.
- Chop cheddar cheese into ½-inch cubes.
- Make meatballs about the size of a golf ball (about 2 inches round). Add a cheddar cheese cube to the middle of the meatball and seal the turkey mixture around the cheese.
- Place on baking sheet. Bake for 35 minutes
- Enjoy!!!!
- Serve with Queso, ketchup, mustard, and pickles
