What do you do when you have a bunch of cherry tomatoes, leftover chicken, baby spinach, and Brie Cheese? We made this crazy good Balsamic Glazed Tomatoes, Chicken, and Brie Sandwich.
Not sure about where you live but it was a very cool Spring and start of Summer in N.E. Ohio. This was our first Spring back in Ohio so we weren't sure when to start our garden. We have a lot of trees in our yard so figuring out the best place to start the garden was very important. During the winter we picked, what seemed like, the perfect garden spot in the middle of the yard. Which would be a major issue for our 4 big dogs. That's basically their playground!
Garden location
By Mid-May the sun had shifted and we found the (second) perfect spot for the garden. So then the real work started!!! We tilled up the yard and had so much fun planting all our tomatoes, peppers, squash, cucumbers, and more.
It felt like it took forever to get our first few veggies from the garden. The squash would get blossoms and then fall off. Later, we found out that will happen until the blossoms are pollinated. It was so exciting when we saw that first squash and I can't even tell you how excited we were to get those first few cherry tomatoes. They were so sweet and juicy. Anyway, we waited a few more weeks and it wasn't until mid-August before we were really getting tomatoes.
Beautiful Fall
This fall has been awesome and we are so glad. . . for so many reasons. Our garden started to produce tons of tomatoes, peppers, and squash. Just a few cucumbers because something decided to eat them! The peppers and tomatoes have been wonderful. It's the end of October and we're still reaping the benefits of our garden. Plus, we moved all the herbs to the sunroom, so hopefully, we will have fresh herbs for most of the winter.
Balsamic Glazed Tomatoes, Chicken and Brie Sandwich
Since we had leftovers from the Garlic Herb Roasted Chicken from the other day and these great cherry tomatoes still in our garden, we had to make this balsamic glazed tomatoes, chicken, and brie sandwich. This sandwich was so bright and flavorful. We were lucky to have the tomatoes from our garden but this is a sandwich I will make with my leftover Turkey at Thanksgiving. The Balsamic vinegar will even pop the flavor of those winter cherry tomatoes we can get at the grocery store.
Balsamic Glazed Tomatoes, Chicken & Brie Sandwich
Ingredients
Saute Tomatoes
- 3 Cups Cherry tomatoes @1 pound
- ½ Tablespoon Olive Oil
- 1 Clove Garlic
- 2 Cups Fresh spinach ¾ Frozen spinach
- 2 Tablespoon Fresh thyme 2 teaspoons dried thyme
- 2 Tablespoon Balsamic vinegar
Fresh Spinach
- 1 Cup Fresh spinach
- 2 teaspoon Olive Oil
- 2 Tablespoon Balsamic vinegar
Additional Ingredients
- 6 Ounces Chicken or Turkey 6 to 8 ounces of roasted, grilled, or rotisserie Chicken or Turkey
- ½ Crusty Bread 2 - Sub Size loafs
- 3 Ounces Brie Cheese
Instructions
Saute Tomatoes
- Slice or chop garlicSaute garlic in ½ tablespoon olive oil
- Add tomatoes to saute pan with the garlic
- Add Thyme to saute pan with the tomatoesCook Tomatoes over medium heat for about 5 minutes. They will start to get soft.
- Add 2 Cups of fresh spinach and balsamic vinegar. Saute for one minute.Remove the pan from the heat
Fresh Spinach
- Coat 1 Cup of fresh Spinach with ½ teaspoon of olive oil
- Toss 2 Tablespoons of balsamic vinegar with the Spinach
- Salt and Pepper Spinach to taste
Build Sandwich
- Cut Bread lengthwise. Add Chicken on one side of the bread and Brie on the other side.
- Place in Oven under the broiler until cheese starts to melt. Remove from oven and add tomato mixture to sandwich
- Add Fresh Spinach mixture to the top of the tomatoes
- Enjoy!!!!!!
