Saute Tomatoes
- 3 Cups Cherry tomatoes @1 pound
- ½ Tablespoon Olive Oil
- 1 Clove Garlic
- 2 Cups Fresh spinach ¾ Frozen spinach
- 2 Tablespoon Fresh thyme 2 teaspoons dried thyme
- 2 Tablespoon Balsamic vinegar
Fresh Spinach
- 1 Cup Fresh spinach
- 2 teaspoon Olive Oil
- 2 Tablespoon Balsamic vinegar
Additional Ingredients
- 6 Ounces Chicken or Turkey 6 to 8 ounces of roasted, grilled, or rotisserie Chicken or Turkey
- ½ Crusty Bread 2 - Sub Size loafs
- 3 Ounces Brie Cheese
Fresh Spinach
Coat 1 Cup of fresh Spinach with ½ teaspoon of olive oil
Toss 2 Tablespoons of balsamic vinegar with the Spinach
Salt and Pepper Spinach to taste
Build Sandwich
Cut Bread lengthwise. Add Chicken on one side of the bread and Brie on the other side.
Place in Oven under the broiler until cheese starts to melt. Remove from oven and add tomato mixture to sandwich
Add Fresh Spinach mixture to the top of the tomatoes
