Who doesn't want something sweet once in a while?? Actually, if I could, every meal would have some kind of dessert. So, we have a banana blueberry cake that's good for breakfast, lunch, and dinner!!! This delicious combination of banana and blueberry with a hit of zesty lemon will satisfy any sweet tooth!!!
How did we cut calories and not flavor?
Most cake recipes call for ¼ cup to ½ cup of oil. The oil can add 450 to 900 calories. So we replaced the oil with plain unsweetened applesauce. The applesauce has about 12 calories for ¼ cup. The cool thing, we didn't notice any difference in the flavor of the cake. By not using oil and adding 3 bananas with the applesauce the cake was a little more dense BUT the flavor is what is important when eating anything. Speaking of flavor!!! The bananas and blueberries are an absolutely perfect combo and the zip of the lemon zest is so tasty.
Something else we did to save a few calories was to use 1% milk. No need to use whole milk unless that's all you have in the house. We also used non-fat Greek yogurt which also adds a nice flavor.
These easy changes make each piece of cake about 50 calories less than the full-fat version.
Banana Blueberry Cake is So Simple to make!!!!
This is a fun cake to make and really easy. One of the main ingredients is ripe (overripe) Bananas! We use a yellow or white box cake mix. Actually, a chocolate cake mix would also be really good.
First, like any recipe, make sure to get all the ingredients out before starting. This helps speed up the time to make the cake.
Cream the bananas and lemon zest with a stand mixer, hand mixer, or whisk. After the bananas are creamed. Add in the Applesauce, Milk, Yogurt, Eggs, and Vanilla. This is what makes this banana blueberry cake so tasty!
After everything is mixed together add the box cake mix. Blend the cake mix into the banana mixture.
Prepare the cake pans
We used ramekins and a small bunt pan but any type of cake pan can be used. Just look at the size recommendations on the cake box. The ramekins were fun because it can be individual servings.
We spray our cake pans with butter or olive oil cooking spray. Once the pans are prepared pour in the cake batter. Top with blueberries. We put about ⅓ cup of berries in each ramekin.
Air Fry or Bake The Banana Blueberry Cake
To Air Fry the cake, place it in the pan in an air fryer at 375 degrees. It takes about 24 minutes. The time all depends on the air fryer.
Baking the cake in the oven takes about 40 minutes. Check the box for the time suggested to cook the cake.
Keep in mind that the blueberries add more moisture to the cake, so it will take a little longer to cook.
Check to see if the Banana Blueberry Cake is done
The first time we made this banana blueberry cake we used a toothpick to check for doneness, however, the toothpick doesn't go all the way to the bottom of the cake. We discovered that because of the blueberries, and all that extra moisture, they can sink some to the bottom of the cake. We found that using a table knife that goes all the way to the bottom of the cake is a better measure for doneness than the shorter toothpick. When the knife comes out clean the cake is done!!!
We made our favorite blueberry sauce to add to the top of the cake. This is a very simple recipe and only takes about 10 minutes to make. Plus, the great part, it can be used on pancakes, french toast, cheesecake, or on ice cream!

Ingredients
- 1 Box Yellow or White Cake Mix
- 3 Ripe Bananas
- 1 Lemon Zest Zest of one lemon
- ½ Cup Unsweetened Applesauce
- ½ Cup 1% Milk
- ¾ Cup Non- Fat Plain Greek Yogurt
- 3 Eggs
- 2 teaspoons Vanilla
- 2 Cups Fresh Blueberries
Instructions
- Zest the lemon. In a mixer cream the bananas and lemon zest together.
- After the bananas are blended, mix in the applesauce, milk, yogurt, eggs, and vanilla.
- After the bananas and other ingredients are mixed together add the box cake mix.
- Blend together until smooth
- Spray the cake pans with cooking spray. We use ramekins and/or a small bundt pan. Round cake pans, rectangle pans, or a large bundt pan can be used. The dry cake mix will recommend the size of the pans. Just remember to spray the bottom and sides of the pans with cooking spray.
- Pour the cake mixture into the cake pan/ramekins
- Add blueberries to the top of the cake batter
- Air Fry at 375 for 24 minutes. Or oven bake according to box instructions, usually 40 minutes
- To test if the cake is done, poke a table knife down the middle of the cake. When the knife comes out clean the cake is done!
- Enjoy with ice cream, blueberry syrup, or even cool whip. Or, if you're really feeling sassy, have all three!!!!
