Cake Mix
Bundt Pans

- 1 Box Yellow or White Cake Mix
- 3 Ripe Bananas
- 1 Lemon Zest Zest of one lemon
- ½ Cup Unsweetened Applesauce
- ½ Cup 1% Milk
- ¾ Cup Non- Fat Plain Greek Yogurt
- 3 Eggs
- 2 teaspoons Vanilla
- 2 Cups Fresh Blueberries
Zest the lemon. In a mixer cream the bananas and lemon zest together.
After the bananas are blended, mix in the applesauce, milk, yogurt, eggs, and vanilla.
After the bananas and other ingredients are mixed together add the box cake mix.
Blend together until smooth
Spray the cake pans with cooking spray. We use ramekins and/or a small bundt pan. Round cake pans, rectangle pans, or a large bundt pan can be used. The dry cake mix will recommend the size of the pans. Just remember to spray the bottom and sides of the pans with cooking spray.
Pour the cake mixture into the cake pan/ramekins
Add blueberries to the top of the cake batter
Air Fry at 375 for 24 minutes. Or oven bake according to box instructions, usually 40 minutes
To test if the cake is done, poke a table knife down the middle of the cake. When the knife comes out clean the cake is done!
Enjoy with ice cream, blueberry syrup, or even cool whip. Or, if you're really feeling sassy, have all three!!!!
