I would absolutely love to wake up to delicious blueberry sauce-topped pancakes every morning! Pancakes were a regular winter breakfast during my childhood, especially when we had Pure Ohio Maple Syrup. My dad's farm had large woods with maple trees and a sugar house where he tapped the trees and collected the sap to make maple syrup.
We used draft horses weighing over 2000 pounds to pull a sled with a large tank for gathering sap in the woods and then cooking it down to make delicious maple syrup. My Dad took pride in the syrup's clear golden color. I can remember people asking him how he was able to get his syrup to that clear golden color. Fun memories
Maple Syrup
I can remember my Dad canned the syrup in gallon and quart-size metal containers. His syrup was known to be some of the best in the area. My Dad sold most of the syrup as another income stream. He won many awards for the great maple syrup he made. The best part... it was so much fun for me and my brother to spend time with my Dad.
When I was younger, my brother Johnnie and I had a blast gathering the sap together. My dad used to let us take the horses by ourselves while he made syrup in the sugar house. Even though it was hard work, he always made it seem like a fun game. As kids, we didn't always follow the instructions, and one time, we got ourselves into some trouble. While we were crossing a creek with the sled, I accidentally fell into the icy water. Luckily, my dad saw what had happened and rushed to pull me out. He took me to the sugar house to warm up. I can still remember how cold I was. Although my dad was a bit upset with us, it's still a cherished memory that I look back on fondly.
How we decided to make Blueberry Sauce
Who doesn’t love to go out for breakfast/brunch? When we do go out for breakfast, Amy always orders Blueberry pancakes, while I prefer 2 eggs over easy with bacon and hash browns. However, our recent breakfast outings have taken forever, so we decided to take matters into our own hands and make our own pancakes and blueberry sauce.
The last time we went out, we looked at the number of calories in blueberry pancakes. You don't want to know!!! All I can say is we decided to make our own pancakes and Blueberry Sauce after that. This way, we can control things like sugar and fat.

Blueberry Sauce Recipe
We made a conscious effort to decrease the sugar content in our blueberry sauce while using lemon zest to elevate its taste. The secret to achieving the perfect consistency and flavor profile is to cook the sauce down and then incorporate a fresh batch of blueberries.
I now know why Amy loves having Blueberry pancakes and always orders them when we go out. They are now my favorite, also!!! The homemade blueberry sauce drizzled over a stack of fluffy pancakes makes me wish it was Sunday morning every day!
Guess what, this sauce is so good we use it to class up other dishes like a bowl of vanilla ice cream. Yes!! Drown that ice cream in blueberry sauce! It will change your world! Have a plain cheesecake... add some blueberry sauce. The uses are endless! You get the point. . . this sauce is soooooo good, really all you need is a spoon!

Blueberry Sauce
Ingredients
- 3 Cups Blueberries
- ¼ Cup Sugar
- 1 Tablespoon Lemon Juice
- Zest of ½ Lemon
- ½ Tablespoon Cornstarch
Instructions
- Wash Blueberries
- Mix 2 Cups Blueberries, ¼ Cup Sugar, Lemon Juice, and Lemon Zest
- Place Blueberries/sugar mixture in Sauce Pan
- Cook over low heat for about about 8 to 10 minutes until blueberries start to turn into a sauce. Gentenly stirring constantly
- Mix Cornstarch with 2 tablespoons of water. Stir in the blueberry sauce. The sauce will thicken
- Turn off the heat. Add 1 cup of blueberries
- Enjoy Blueberries on ice cream, pancakes, french toast, cheesecake, and other desserts
