Buffalo Chicken Air Fryer Taquitos
Awesome Appetizer
This recipe is quick and easy to make, and it's also low in calories since it uses 99% fat-free ground chicken breast. If you're counting calories, note that the extra-thin corn tortillas are about 40 calories per tortilla, while regular corn tortillas contain 62 calories each. We typically use the extra thin tortillas. Additionally, the sauce has zero calories! Yes, you read that right: zero calories. However, the cheese does contain calories, so we opted for whipped cream cheese to reduce the amount of cheese used. This adds extra creaminess to the mixture without taking away from the delicious buffalo chicken flavor. The best part? Each Air Fryer Buffalo Chicken Taquito is only 99 calories!!!! Not bad when comparing them to fried taquito, which is around 176 calories!

TIP:
Ground chicken is often considered dry while cooking, leading people to add a lot of oil to it. However, there's a better way to keep the flavor of the chicken and its seasoning intact. Start cooking it with a ¼ cup of water, season the chicken, and if it starts sticking to the pan, add another ¼ cup of water. This method will help to keep the chicken moist and flavorful without having to add any oil. Cook it over medium-high heat and taste it when done to check if you need to add more salt.
