Buffalo Chicken Dip has become a favorite treat in our home, perfect for game day, movie nights, or party appetizers! This is our version of this viral high-protein, lower-calorie recipe. It's a mix of shredded chicken, Ranch dressing, hot sauce (we love the buffalo chicken dip with franks buffalo sauce), cheddar cheese, and cottage cheese. Yes, cottage cheese!!! The Buffalo Chicken dip is baked until golden and bubbly on top, then finished with a layer of Blue cheese. This dip is great for dipping using celery, carrots, pretzels, or chips. Hey, you could even dip a chicken wing in it if you want double chicken!

The best part is, it genuinely fills you up without any guilt about eating too much. Because you are going to want to eat the entire bowl of buffalo chicken dip! Plus, it's quick and easy to make, especially since we used leftover rotisserie chicken. It’s such a convenient and tasty option for an appetizer!
How to Make this Buffalo Chicken Dip
This is easy to make anytime you have leftover chicken. All you need is cooked chicken, cheddar cheese, cottage cheese, and a ranch dressing seasoning packet. Blue Cheese is optional. I know a lot of people don't like blue cheese. To be honest, I don't understand why blue cheese is hated. Blue cheese is great with buffalo chicken, so we figured it had to be added to this dip recipe. My favorite way to have blue cheese is in a stuffed olive served with a gin martini.
Add the cottage cheese and ranch dressing to a food processor and blend for about 30 seconds until the cottage cheese becomes smooth and creamy.



Shred the cheddar cheese:

Shred or cut the chicken into small pieces. Add Chicken, Cheese, Cottage Cheese mixture, and Franks buffalo wing sauce.




Mix everything together and divide into four ramekins or a small casserole dish. We made individual ramekins to serve the Frank's Buffalo Sauce Chicken Dip, so everyone could enjoy their own individual portion. It was really fun having my own bowl with dip. It stayed warm while I enjoyed the dip. Bonus if I wanted, I could double dip!!! Haha




Heat the dip in a 350-degree oven for 20 minutes or until it begins to bubble around the edges. Then, sprinkle a tablespoon of Blue Cheese crumbles on top, and return the dip to the oven for another 5 minutes. This will allow the blue cheese to soften and melt, adding that flavor we all love with blue cheese chicken wings.



We served our Frank's Buffalo Chicken Dip with celery, carrots, and flat pretzels. However, it would also be fantastic with any kind of cracker, chips, or fresh vegetables. Get creative and use whatever you have at home! It's going to be delicious.

- A spoon for stirring the mixture,
- A medium-sized bowl to combine all the ingredients,
- Ramekins for serving individual appetizers. Adding a fun touch to the presentation,
- A cookie sheet - placing ramekins on it makes removing hot dishes from the oven easy, and it makes clean up easy if anything bubbles over.

Buffalo Chicken Dip Recipe for Healthier Snacking
A Few Things We Use
Ingredients
- 2 Cups Chicken Use Baked or Rotisserie Chicken
- 1 ½ Cup Low Fat Cottage Cheese
- 1 Tablespoon Ranch Seasoning
- 4 Ounces Cheddar Cheese
- ¾ Cups Franks Wing Sauce
- 4 Tablespoons Blue Cheese crumbles
Instructions
- Grate the Cheddar Cheese. Cut cooked chicken into small bite-sized pieces. Preheat the oven 350 degrees.
- Add the Cottage Cheese and Ranch Seasoning to a food processor. Blend until the cottage cheese is creamy.
- In a bowl, mix together Chicken, Cottage Cheese, Cheddar Cheese, and Frank's Red Hot Wings Sauce.
- Stir all the ingredients (except the Blue Cheese) together.
- Place the mixture in a baking dish or individual Ramekin bowls
- Bake in a preheated 350-degree oven for 20 minutes until bubbly on the sides.
- Top the Ramekins with ½ to 1 Tablespoon of Blue Cheese crumbles
- Bake for 5 additional minutes. The Blue Cheese will be soft and started to melt.
