Salami Cheesy Grilled Portobello Mushrooms
We love mushrooms, but aside from adding them to a salad or slicing them and sauteing them in a little bit of olive oil, I never really knew what to do with them, especially the large portobello mushrooms. We also love a good mushroom burger. Now, I'm talking about a big juicy burger with cheese and mushrooms on top... NOT, a big mushroom on a bun that's NOT a hamburger. Well, that was the "old" me! We started making grilled portobello mushrooms and I have never looked back! These giant Cheesy grilled portobello mushrooms are so delicious, you'll find yourself making 3 or 4 at a time, they are that addictive! Grilled portobello mushrooms are so meaty and juicy, you'll think you're eating a steak.
Grilled Mushrooms are amazing!
We have discovered that when you grill the mushrooms they take on the smoked flavor from the grill. You get a nice char and a mouthwatering savoriness. The mushroom becomes kind of a savory blank canvas for whatever flavor combination you want to pair with them. For example, originally we topped the grilled portobello with a blue cheese mixture. We figured blue cheese is excellent with steak, of course, it would be good with these...AND IT WAS!!!!!!! We also used pizza as inspiration. Adding Jarlsberg Cheese and Salami
Today we tried a new filling. Again, we used flavor combinations we have liked in the past. This time we used Jarlsberg Cheese (which is a lot like Swiss cheese) and crispy grilled salami...Yes, CRISPY. GRILLED. SALAMI!!!!!!! For added creaminess (and fewer calories) we mixed the grated cheese with cream cheese and chopped a Serrano for added heat. Every time we make grilled portobello mushrooms I say, "This one is my favorite!" Who am I kidding, I couldn't pick a favorite, I love them ALL!

Cheesy Grilled Portobello Mushrooms with Salami
Ingredients
- 2 Portobello Mushrooms Large
- 2 Ounces Jarlsberg Cheese Shredded
- 3 Tablespoons Whipped Cream cheese
- 1.5 Ounces Salami
- 1 Serrano Optional
- Adobo Seasoning To taste
Instructions
- Heat Grill to medium High. Or charcoal until they are hot and coals are mostly red.Grate 2 ounces of Jarlsberg cheese and mix with 3 tablespoons of whipped cream cheese
- Chop serrano pepper (if using) and mix it with the cheese
- Place 1 ½ ounces of salami on grilling aluminum foil and place on the grill. Grill until salami is crispy then remove from grill and allow to cool
- Chop crispy salami
- Clean and remove stems of mushrooms
- Lightly spray both sides of the mushrooms with cooking spray and sprinkle with your favorite Adobo Seasoning.
- Place mushrooms on the grill over direct heat. Grill for 2 - 3 minutes
- Flip the mushrooms over and move off direct heat. Grill for 5 minutes
- Add half the cheese mixture to each mushroom, cover the grill, and grill for an additional 2 minutes until the cheese is melted
- Add salami on top of each mushroom.
- Move mushrooms to plates and ENJOY!!!!!!
