We used our homemade Taco Seasoning mix, but you could use a store-bought one if you prefer. Our homemade seasoning mix is incredibly easy to make and delivers a more flavorful taste than the packaged version. It can be storeed it in a jar or airtight container. We keep it in the spice drawer and its available at all times. You never know when you'll need to make a quick dinner, and this seasoning mix really comes in handy. Just sprinkle it on chicken and bake! 😋 Plus, making your own taco seasoning is cheaper than purchasing a taco mix from the store.
We used Roasted Garlic in this recipe, and it adds a lot of flavor. Roasted garlic doesn't have the harsh taste of fresh garlic, and it brings out a sweet and buttery flavor. We usually roast a couple of heads of garlic at a time. The we have it for later use in dishes throughout the week. It's great to spread on bread as a lower-calorie garlic bread. And it can also be used in many other recipes. Roasting garlic is an easy way to add a lot of flavors without adding calories. Cauliflower Casserole: A Meatless Taco Alternative
Ingredients
- 1 Shallot
- ½ Tablespoon Roasted Garlic Optional
- 1 Head Cauliflower @ 1 pound 8 ounces
- 1 teaspoon salt
- 1 Tablespoon Olive Oil
- 2 Tablespoons Taco Seasoning
- 8 Ounces Queso Fresco Or other Mexican crumbling cheese, or feta
- Cilantro or Parsley for Garnish Or Cilantro Crema
Instructions
- Pre-heat over to 350°Cut Cauliflower into florets or bite-size pieces
- Chop Shallot and place in saute pan with Olive Oil
- Saute Shallot until they start getting soft
- Add Roasted Garlic to Shallots
- Add the Taco Seasoning to Shallots. Stir for 30 seconds to one minute. This will release the flavors of the seasoning.
- Stir in the Cauliflower to coat with taco seasoning. Add ½ Cup water.
- Saute Cauliflower over medium heat until it starts to soften. This will take about 4 to 5 minutes. The water will cook away.
- Place the Cauliflower into a casserole dish.
- Stir in ½ of the Queso Fresco Cheese
- Sprinkle the rest of the queso fresco cheese on top of the cauliflowerTent foil over casserole. Bake in 350° oven for 30 minutes
- Remove foil and Bake for an additional 5 minutes or until the cheese is melted
- Serve with some Cilantro Crema or sprinkle fresh cilantro on top. Enjoy!!!!
