Cauliflower Casserole: A Meatless Taco Alternative

- 1 Shallot
- ½ Tablespoon Roasted Garlic Optional
- 1 Head Cauliflower @ 1 pound 8 ounces
- 1 teaspoon salt
- 1 Tablespoon Olive Oil
- 2 Tablespoons Taco Seasoning
- 8 Ounces Queso Fresco Or other Mexican crumbling cheese, or feta
- Cilantro or Parsley for Garnish Or Cilantro Crema
Pre-heat over to 350°Cut Cauliflower into florets or bite-size pieces Chop Shallot and place in saute pan with Olive Oil
Saute Shallot until they start getting soft
Add Roasted Garlic to Shallots
Add the Taco Seasoning to Shallots. Stir for 30 seconds to one minute. This will release the flavors of the seasoning.
Stir in the Cauliflower to coat with taco seasoning. Add ½ Cup water.
Saute Cauliflower over medium heat until it starts to soften. This will take about 4 to 5 minutes. The water will cook away.
Place the Cauliflower into a casserole dish.
Stir in ½ of the Queso Fresco Cheese
Sprinkle the rest of the queso fresco cheese on top of the cauliflowerTent foil over casserole. Bake in 350° oven for 30 minutes Remove foil and Bake for an additional 5 minutes or until the cheese is melted
Serve with some Cilantro Crema or sprinkle fresh cilantro on top. Enjoy!!!!
