Who doesn't love a good cheesy and savory meal? We came up with a recipe for Turkey Stuffed Pattypan squash that's sure to satisfy your taste buds. We took inspiration from our love for stuffed Acorn and butternut squashes, but wanted to make sure the Pattypan's light and buttery flavor shone through. So, we filled it with a mixture that perfectly complements the squash without being too overpowering. Give it a try and let us know what you think!
The Perfect Mixture
Remember when we made that amazing pattypan squash with goat cheese? Well, we tried a new recipe and it was just as delicious! We didn't want the cheese to melt too fast, so we used cheddar and it was a hit. Plus, we have a great tip for you - try adding whipped cream cheese to your stuffing mixtures to make it extra creamy without adding too much fat and calories from cheese. Trust us, it's a game-changer.

Here's how we prepared the recipe for Cheesy Turkey Stuffed Pattypan Squash Recipe.
To begin, start by slicing off the top quarter inch of the Pattypan. Then, use a spoon to scoop out the inside of the squash. Don't discard the “squash meat” (pulp) as you can use it later.
To make the filling, start by sautéing sliced garlic in olive oil. Then, add ground turkey and cook until it is fully done and browned.
While the turkey is browning, you can easily prepare the cheese mixture. Just combine cheddar cheese and cream cheese in a bowl. Once the turkey is cooked, remove it from heat and stir in the pattypan squash pulp. Finally, add in the cheese, salt, and pepper to your liking.
Once the squash is prepared, the next step is to stuff it and then bake it. It's important to remember to pour a quarter-inch of water into the baking dish before placing the squash in to prevent sticking and ensure even cooking.

Cheesy Turkey Stuffed Pattypan Squash
A Few Things We Use
Ingredients
- 4 Large Pattypan Squash
- 2 Cloves Garlic 4 Cloves Roasted Garlic
- 1 Tablespoon Olive Oil
- 8 Ounces Ground turkey
- 1 Tablespoon Taco Seasoning
- 3 Ounces Cheddar Cheese Shredded
- 3 Tablespoon Whipped cream cheese
Instructions
- First, rinse the Pattypan with cool water. Then, slice off the tops and set them aside. Don't throw them away, as they can be quite tasty!4 Large Pattypan Squash
- Remove the insides of the squash and keep the pulp.
- Slice the garlic. Then, heat the olive oil in a large sauté pan. Add the sliced garlic and cook for about 20 to 30 seconds. After that, add the ground turkey and taco seasoning. Cook until the turkey is done, which usually takes around 5 minutes, and until it is browned. Finally, pour in ½ cup of water and simmer until the water has cooked away.
- Cut the squash into pieces and mix it with the turkey. Cook until the squash turns tender. This should only take a couple of minutes.2 Cloves Garlic, 1 Tablespoon Olive Oil, 8 Ounces Ground turkey, 1 Tablespoon Taco Seasoning
- Mix in the cream cheese and cheddar cheese with the turkey and squash blend.3 Ounces Cheddar Cheese, 3 Tablespoon Whipped cream cheese
- Fill the Pattypan and arrange them in a baking dish.
- To prepare, place the Pattypan tops on top of the stuffed Squash. Pour about ¼ cup of water into the bottom of the baking dish. Bake in an oven preheated to 375 degrees for 30 minutes. Once done, check if the Pattypan is soft and easily pierced with a fork.
