First, rinse the Pattypan with cool water. Then, slice off the tops and set them aside. Don't throw them away, as they can be quite tasty!
4 Large Pattypan Squash
Remove the insides of the squash and keep the pulp.
Slice the garlic. Then, heat the olive oil in a large sauté pan. Add the sliced garlic and cook for about 20 to 30 seconds. After that, add the ground turkey and taco seasoning. Cook until the turkey is done, which usually takes around 5 minutes, and until it is browned. Finally, pour in ½ cup of water and simmer until the water has cooked away.
Cut the squash into pieces and mix it with the turkey. Cook until the squash turns tender. This should only take a couple of minutes.
2 Cloves Garlic, 1 Tablespoon Olive Oil, 8 Ounces Ground turkey, 1 Tablespoon Taco Seasoning
Mix in the cream cheese and cheddar cheese with the turkey and squash blend.
3 Ounces Cheddar Cheese, 3 Tablespoon Whipped cream cheese
Fill the Pattypan and arrange them in a baking dish.
To prepare, place the Pattypan tops on top of the stuffed Squash. Pour about ¼ cup of water into the bottom of the baking dish. Bake in an oven preheated to 375 degrees for 30 minutes. Once done, check if the Pattypan is soft and easily pierced with a fork.
