If you're a fan of chicken salad, you know that there are countless ways to make it. You can experiment with different ingredients, such as onions, celery, grapes, apples, nuts, and the list goes on and on and on. The one ingredient everyone agrees on for this Salad is.... "drum roll please" . . .  Chicken!!!   And chicken is the star of the show in this recipe. So, get ready to indulge in a mouth-watering chicken salad sandwich that's not only delicious but also healthy. This recipe is packed with flavor and is low in calories, making it the perfect choice for a light and satisfying lunch.

Chicken Salad with Tons of Flavor

Chicken Salad

This recipe is a classic chicken salad made with leftover grilled chicken.

We have replaced mayonnaise with a fat-free sour cream mixture to reduce fat content and calorie count of this recipe.

Grilled Chicken

We enjoy grilling throughout the year, but in the summertime, we tend to grill almost everything. Grilled chicken is one of our favorites.   It is versatile and easy to cook.  The charred grill marks add a smoky flavor to the chicken breasts. T

QUICK TIP:

Leftover chicken can be used to make a delicious sandwich. Grilled Chicken, Rotisserie chicken, roasted chicken, or baked chicken breast can be used for this recipe. To ensure that you have leftover chicken, consider grilling an extra chicken breast when you cook. This way, you can make chicken salad the next day. It can be fun to experiment with different ways of using leftover chicken.

As I mentioned earlier, there are countless ways to make chicken salad, and this recipe provides the basic instructions for a really good one. You can then add grapes, nuts, or anything else that suits your taste buds. Since there are so many amazing combinations you can create, we won't claim that this is the best chicken salad recipe ever. Instead, use it as a foundation for your own unique combination and add whatever makes you happy on any given day.

Here's what you'll need for the Chicken Salad:

  1. Bake, Grilled Chicken breast or rotisserie chicken
  2. Fat-free Sour Cream
  3. Pickles
  4. Pickle juice
  5. Lemon juice
  6. Green Onion
  7. Hardboiled Eggs
  8. Yellow Mustard
  9. Cumin
  10. Salt
  11. Pepper

Low-Calorie Chicken Salad

The Hack to replace mayonnaise with sour cream is to add lemon juice, pickle juice, and mustard - it may sound strange, but it works.

TIP:  Put Lemon juice on the Chicken and toss. This will enhance the spices and really make the chicken POP!

Serve the Chicken Salad with your favorite bread or crackers. To save even more calories, you can serve it on lettuce or as a lettuce wrap. And most importantly, don't forget to add some zest to it with your favorite ingredients! I'm thinking of adding some green seedless grapes and almonds next time... sounds yummy, right? Ingredients

  • 8 ounces Chicken breast
  • 2 Eggs Hardboiled eggs
  • ½ Cup Fat-Free Sour Cream
  • 2 Tablespoon Dill Pickle juice
  • 2 Tablespoon Frenchs Mustard
  • 3 Small Dill Pickles
  • 1 Large Spring Onion
  • 3 Ribs Celery
  • 2 teaspoon Cumin
  • 2 Tablespoons Lemon Juice

Instructions

  • Cut grilled Chicken Breast, Rotisserie chicken, or baked chicken into bite-size pieces

  • Juice one Lemon, and add about 1 Tablespoon (more or less to taste) to the chicken. Toss to coat. We like to grill the lemons to really bring out the juice.

  • Blend together Fat-Free Sour Cream, pickle juice, cumin, 2 teaspoons of lemon juice, and Frenchs Yellow Mustard

  • Chop celery stalks, onions, eggs, and pickles

  • Mix together chopped celery, onions, and pickles to Chicken.

  • Stir in the fat-free sour cream mixture to Chicken.
    Add Salt and Pepper to Taste
