Ingredients

  • 8 ounces Chicken breast
  • 2 Eggs Hardboiled eggs
  • ½ Cup Fat-Free Sour Cream
  • 2 Tablespoon Dill Pickle juice
  • 2 Tablespoon Frenchs Mustard
  • 3 Small Dill Pickles
  • 1 Large Spring Onion
  • 3 Ribs Celery
  • 2 teaspoon Cumin
  • 2 Tablespoons Lemon Juice

Instructions

  • Grill Chicken Breast or use Rotisserie chicken or baked chicken. Cut into bite-size pieces
  • Juice one Lemon, and add about 1 Tablespoon (more or less to taste) to the chicken. Toss to coat. We like to grill the lemons to really bring out the juice.
  • Blend together Fat-Free Sour Cream, pickle juice, cumin, 2 teaspoons of lemon juice, and Frenchs Yellow Mustard
  • Chop Celery stalks, Onions, and Pickles
  • Mix together chopped celery, onions, and pickles to Chicken.
  • Chop hardboiled Egg. Add to chicken mixture
  • Stir in the fat-free sour cream mixture to Chicken.
    Add Salt and Pepper to Taste
  • Serve on bread, crackers, or flour tortillas or if you really want to save calories serve on lettuce as a lettuce wrap. ENJOY!!!
