- 8 ounces Chicken breast
- 2 Eggs Hardboiled eggs
- ½ Cup Fat-Free Sour Cream
- 2 Tablespoon Dill Pickle juice
- 2 Tablespoon Frenchs Mustard
- 3 Small Dill Pickles
- 1 Large Spring Onion
- 3 Ribs Celery
- 2 teaspoon Cumin
- 2 Tablespoons Lemon Juice
Grill Chicken Breast or use Rotisserie chicken or baked chicken. Cut into bite-size pieces
Juice one Lemon, and add about 1 Tablespoon (more or less to taste) to the chicken. Toss to coat. We like to grill the lemons to really bring out the juice.
Blend together Fat-Free Sour Cream, pickle juice, cumin, 2 teaspoons of lemon juice, and Frenchs Yellow Mustard
Chop Celery stalks, Onions, and Pickles
Mix together chopped celery, onions, and pickles to Chicken.
Chop hardboiled Egg. Add to chicken mixture
Stir in the fat-free sour cream mixture to Chicken.Add Salt and Pepper to Taste Serve on bread, crackers, or flour tortillas or if you really want to save calories serve on lettuce as a lettuce wrap. ENJOY!!!
