Chili cheese grits and spicy shrimp have the best flavors and textures! That's it! Full Stop! They are Delish!!!! 🙂 It's a flavor explosion with every bite of the spicy shrimp, green chilies, and, don't forget, those cheesy creamy grits. The shrimp are nice and spicy with that slightly sweet flavor that makes shrimp, OH, SO GOOD! Then you have the creamy cheesy grits with green chilies. Just, YUM! Now, I adore grits just with salt, pepper, and maybe some butter. Amy, on the other hand, really dislikes grits this way. Now, she absolutely LOVES this dish and never passes up grits with sausage gravy. Of course who wouldn't pass up anything covered in sausage gravy or Cheese??? That would just be crazy!!!
I have to say the first time Amy had Chili Cheese grits, I had to lie to her. Yes, I told her it wasn't grits. Of course, she knew it was but she was a trooper and tried it anyway. Guess what, she loved it!! Again, who passes up anything covered in cheese??? 🙂 . Even now, she still won't eat grits with just salt and pepper!
Finding Grits!
We moved to North Carolina when Amy was around 6 years old. So she grew up loving so many southern dishes. Of course, her favorite food of all time is N.C. BBQ. Vinegar based of course! Is there any other kind of BBQ?? Oh, another one of her favorite food groups is anything from Bojangles!
In North Carolina, you can find all kinds of grits in almost every grocery store. There are yellow, white, and even blue grits. They come as Stone-ground, Quick, Regular, Instant, and Hominy grits. Don’t confuse grits with cornmeal....... They're very similar but cornmeal has a finely ground texture for baking, making cornbread, and breading fish. Ahhh Yes, that good old southern cornbread.
I prefer either regular or stone-ground grits but the quick grits are still delicious. Making Stone-ground grits is a labor of love. It does take more time but, oh boy, they are delicious!
In Ohio finding grits isn't as easy! We found Quick Grits and that's what we used for this recipe. The quick grits work great for making chili cheese grits and have excellent flavor and texture,
Tasty spicy Chili Cheese grits
We grilled the shrimp for this recipe. I often like to Sauté the shrimp in olive oil, roasted garlic, and some pepper flakes. Another option for the shrimp is to buy them already cooked at the grocery store. Any option you like for cooking the shrimp will work.
The creamy cheese grits are complimented with the fun tangy flavor of the green chilies and the nice spicy sweet shrimp and roasted garlic. Oh yeah, this is a complete dish of comfort food!!! If you have a "non-lover of grits" in your house, I'm sure they'll love this dish - just like Amy!
TIPS:
- When making Grits follow the directions on the back of the Box. Don't make it with water make it with milk. It'll make the grits really creamy and adds a wonderful flavor to the grits.
- Measure everything
- Use your favorite seasoning for the Shrimp. We used Cayenne pepper and some garlic powder. But Old Bay seasoning or Slap Ya Mama will also be very good. Or you can purchase already-cooked shrimp at the grocery store.
- Buy the cheese in a block not already shredded. The cheese tastes so much better (and really seems like it melts better) when you grate it yourself.
- Use Roasted Garlic. It will change your life HaHa
Chili Cheese Grits and Shrimp
A Few Things We Use
Ingredients
Grits
- 1 ½ Cups Grits
- 3 Cups 1 % MIlk The Grits package calls for 6 cups of water. I use ½ milk instead of water
- 3 Cups Water
- ½ teaspoon salt
Cook Shrimp
- 1 Pound Shrimp
- ½ Tablespoon Cayenne Pepper
- 1 Teaspoon Garlic Powder
- 1 Tablespoon Olive Oli
Chili Cheese Grits with Shrimp
- 7 Ounces Green Chilies
- 2 Cups Cheddar Cheese
- ½ Cup Cream Cheese
- 1 Tablespoon Roasted Garlic or 2 Cloves Fresh Garlic
- 2 Eggs
- ½ Teaspoon Salt
Instructions
Grits - Shrimp
- Preheat oven to 350 degreesCook Grits According to the Recipe. I use Milk instead of Water. It gives the grits a creamier flavor. It takes a little longer but it's worth the boost of flavor for the gritsPeel the shells off of the Shrimp
- Rinse Shrimp
- Use your favorite Shrimp Spice. We used Cayenne Pepper and Garlic powder. But you could use 2 Tablespoons of Old Bay. Toss the Shrimp in your favorite spice
- Heat Olive Oil. Add The Shrimp to saute until done. About 3 minutes. We cooked ours on a salt block. The shrimp is done when it turns pink.
Chili Cheese Grits with Shrimp
- Put Cooked Grits in Mixing Bowl
- Shred the cheese. Add the cheese to the grits
- Add Cream Cheese to the grits
- Add the green chilies to the grits
- Add Roasted garlic To the grits
- Add eggs to the grits
- Mix together the grits, cheese, cream cheese, green chilies, roasted garlic, and eggs
- Add the shrimp to the grits
- Gently mix the Shrimp into the grits
- Place the grits mixture in a baking dish (8x8 dish)
- Sprinkle paprika on top of the grits
- Bake in a 350-degree oven for 60 minutes
- Enjoy!!! We served the grits with a grilled Chicken Breast and Broccoli
