So we were at our new grocery store the other day, and as we were walking by the meat/fish section, we saw these beautiful cod fillets. We were immediately intrigued by all the possibilities of delicious things we could make with the cod. The cod fillets were calling our names. Seriously, it was really strange hearing Sue.. Amy buy me!! No! we didn't hear that. Haha. I think, at the same time, we both said, "How much should we buy?" We knew we wanted to make something light and that would make the Cod the star of the dinner.
Finally found fresh fish
So, we kind of eyeballed what we thought we needed for a couple of meals, and the guy behind the counter wrapped it up for us, and away we went. It wasn't until check out that either of us noticed the price of this "beautiful" cod. We wondered why the fishmonger kept asking us are you sure you want this much. As we were in the parking lot (still in shock over the $45 of Cod we just bought!!!), we came to the conclusion that if the fish was that pricey....Surely, it cooks itself and serve us with a glass of wine.
This is what happens when you live somewhere where it's impossible to find fresh fish, then you move to a new town where fresh fish is EVERYWHERE. You get a little overly excited. hahaha
Citrus Dill Baked Cod
We wanted to make sure to cook the fish so that the flavor shines. Also, we wanted to do something easy and low in fat. Who doesn't love that?
The aim of this recipe was to highlight the flavor of the codfish and create a dish that is both easy to prepare and low in fat. Who wouldn't love that, right? This recipe is versatile and can be used with any light/white fish, but for this particular dish, we used cod.
Here's what you'll need: - Light/white fish (make sure to check the price before purchasing) -
- Aluminum foil
- 1 lemon
- 1 lime
- 2 sprigs of fresh dill
- Salt
- Adobo seasoning (or your preferred seasonings)
To prepare the cod, wrap the fish in aluminum foil with slices of lemon and lime, sprigs of dill, salt, and seasonings. Bake in the oven until cooked through and enjoy the delicious and flavorful fish that's ready in no time!
The cooking process couldn't be simpler! Just wrap the fish in a foil packet, bake for 15 minutes, and voila! Your taste buds are in for a treat. The citrusy flavor of the dish is the perfect pairing for the fish, providing a refreshing and zesty taste. The dill has a delicate flavor that subtly enhances the overall dish without overpowering it. To add an extra kick of flavor, we opted for adobo seasoning, but you could also try blackened seasoning or just salt and pepper. The harmonious blend of flavors makes this dish an absolute winner!
Citrus Dill Baked Cod
Ingredients
- 10 Ounces Cod Fish Or other white fish
- ½ teaspoon Adobo Seasoning Optional
- 1 Lemon
- 1 Lime
- 3-4 Sprigs Fresh Dill
- Sea Salt to taste
Instructions
- Preheat the oven to 375 degrees. Cut a piece of aluminum foil large enough to wrap around the fish fillet. Rinse and pat dry the fillet with a papertowel, then place it in the center of the aluminum foil.
- If using adobo seasoning, sprinkle on the fish. Or use your favorite seasoning. Lemon pepper is also a really good option.
- Slice Lemon and Lime
- Alternating lemon and lime, add the slices to the top of the fish
- Add the fresh dill sprigs to the top of the lemon and lime slices on the fish
- Fold the foil around the fish. The easiest way is to bring the center together and fold at the top. Then, wrap the sides like a present with the seams up to keep in juices
- Place a foil packet on a baking sheet and bake in the oven for 15 minutes. Depending on the thickness of your fish it may take longer. Check after 15 minutes. Fish should flake with a fork and be firm to the touch in the middle. You can also use a meat thermometer to check the internal temperature
- Serve with a salad and enjoy
