Before we decided to focus on changing our lifestyle, we used to indulge in big breakfasts. One of my all-time favorite breakfasts is Sausage Gravy with Biscuits, which, on the weekends, I would enjoy with a Bloody Mary while the biscuits bake. However, since we decided to change our eating habits, we only have one biscuit with our Sausage Gravy. We also enjoy having Potatoes, Eggs, and Corned Beef Hash for breakfast. We have reduced the calories in our Corned Beef Hash and added some spice for an extra kick.

Easy Corned Beef Hash recipe for breakfast
On Saint Patrick's Day, we look forward to more than just enjoying a cold beer. One of the most enjoyable activities is making a delicious Corned Beef Hash. Moving to Maine opened our eyes to the fact that you can actually buy corned beef that isn't canned, which was a pleasant surprise. Last year, we tried grilling the corned beef, and it turned out to be a delightful experience. This experimentation led us to create other mouth-watering dishes, such as corned beef with poached eggs, which was an absolute treat for our taste buds.

All you need for this dish is a can of corned beef, one large potato, eggs, shallot, oregano, garlic powder, salt, and pepper. Use only one teaspoon of olive oil
We cut back the olive oil. The oil isn't needed, and it cuts out a ton of calories but doesn't change the flavor.
Corned Beef Hash Using very little oil
To prepare the corned beef hash, start by sautéing the shallots and potatoes with the spices. If the potatoes start to stick to the pan, add some water instead of oil. While oil is usually added to potato recipes, water is a healthier option and keeps the calories down. Another option is to air fry the potatoes to significantly reduce the need for oil and speed up the cooking time of the corned beef hash.
When the potatoes are cooked, add the corned beef to warm it up. For a spicy version, add two teaspoons of cayenne pepper at this point, and then add the eggs and cook together.

Corned Beef Hash: How to Indulge in a Delicious Breakfast
Ingredients
- 1 ½ Cup Corned Beef or One Can Corned Beef
- 1 Large Russet Potato
- 1 teaspoon Olive Oil
- 1 teaspoon Sea Salt
- 1 Medium Onion Or 1 Shallot
- ½ Tablespoon Olive Oil
- 1 clove Garlic or 1 teaspoon of garlic powder
- 1 teaspoon Oregano Opitional
- 6 Eggs
- 1 teaspoon Sea Salt
- Pepper to Taste
Instructions
- Chop the onion and garlic
- Chop the potato
- Add ½ Tablespoon olive oil and onion and garlic to a saute pan.
- When the onion has softened and translucent, add the potatoes to the sauté pan.
- Stir the potatoes and onions together, then add the corned beef and heat the mixture until it's fully warmed through.
- Once the corned beef is heated, you can add the eggs to the pan. Don't forget to season the eggs with salt and pepper for added flavor.
- After cooking the potatoes, stir in corned beef and eggs. Taste and adjust seasoning as needed after the eggs are cooked.
- Serve and ENJOY
